There have been numerous threads such as Thread: Google is always listening. Live test that show these voice apps harvest your information. There are even recommendations on how to disable them on your systems.
What people aren't understanding is all the other ways Google, Alexa and the others can harvest your data even if you don't use them.
For example, think of all those sales/customer phone agents who keep a live phone in their pocket or purse so they can "keep in touch with their kids." Along with every other agent at that call center within earshot.
Then think about that agent repeating back your name, address, what you ordered, medical condition, whatever. Boom - recorded, cataloged, and correlated by some third party you never invited to the conversation.
