I made two sandwiches yesterday. I started buying the extra large English muffins. It was a very filling breakfast.
First I had to inspect my eggs. They have been in the fridge for some time. I bought some new ones but I wanted to use the old eggs if they were still okay.
To test an egg, put it in water. If it sinks it's okay and if it floats it's bad. I'm sure that's not an exact science so it doesn't hurt to give them the smell test.
I found three eggs that didn't float so I gathered my other ingredients.
Three small frozen pork patties, some leftover pre-cooked bacon, provolone cheese, mixed spice blend, and salt & pepper.
I started the frozen patties first, then put on the bacon and then the eggs. All in one non-stick pan. (I should have used my two burner griddle but I didn't feel like cleaning it.) After that, I sprinkled on the seasonings.
Once everything looked mostly cooked I started toasting two English muffins and I put the cheese on top of the eggs and then the hot sausage on top of that to start it melting.
When the English muffins were toasted I would have buttered them but I was out of butter. So I just divided up everything in the pan onto both sandwiches.
I added a few drops of very spicy hot sauce and then some ketchup. I also put more ketchup on the plate to dip them in. (I like ketchup).
They were amazing, just needed butter...
