Do we have any experts on wild foods that can give us some pointers? I get a lot of information online.


The critical factor in using plants for food is to avoid accidental poisoning. Eat only those plants you can positively identify and you know are safe to eat.

Some types of plants that in my opinion are easily recognized and edible include:

Dandelion greens (young ones are the tastiest, can be used in salads, soups, or stir-fried - older ones are still edible but can be bitter).

Ramps (wild leeks) [link to southernfood.about.com]

Cattails - can be eaten as a green shoot in spring and summer, and the roots eaten in fall/winter. Dig up the roots, wash, grate, and boil and then use the pulp as a starchy vegetable. [link to www.wildmanstevebrill.com]
