Re: I Tried Something New Today
buy a rotisserie chicken and make:

CURRY IN A HURRY
Ingredients

o 1 (10 ounce) packages frozen green beans
o 1 1/2 cups matchstick carrots
o 1 tablespoon vegetable oil
o 1 medium onions, diced
o 1 teaspoon curry powder
o 2 teaspoons grated fresh ginger
o 2 garlic cloves, minced
o 1 cup chicken broth
o 1/3 cup apricot preserves
o 1 tablespoon cornstarch
o 1 lb cooked chicken, cut into bite-size pieces
o cooked rice

Directions

1. Place green beans and carrots in medium glass bowl; cover and microwave 6 minutes.
2. Set aside.
3. In large nonstick skillet, heat oil over medium-high heat, add onion and curry powder, and cook, stirring occasionally, until onion is soft, about 6 minutes.
4. Stir in ginger and garlic, and cook 1 minute more.
5. Stir chicken broth and apricot preserves into skillet; bring to a boil.
6. In small bowl, combine cornstarch with 1 tablespoon water.
7. Whisk cornstarch mixture into skillet, and cook 1 minute longer.
8. Reduce heat to medium-low, stir in green beans, carrots, and chicken, and heat through.
9. Serve over rice.

Re: I Tried Something New Today
I often shop at Asian markets.

For curry - look in the canned section for tiny cans. Sorry, I couldn't find my cans to give you a brand name. They are from Thailand. Different types - different color cans (green, yellow, red). (masaman, green, red)

You mix the contents with cans of coconut milk, meat and veggies. I often use leftover meats and veggies.

Excellent stuff. Seriously great stuff.

Are you on the westside, Nikki? Just a guess since most of the Asian stores are Beltway/Biss-Bellaire area now. I saw on Kevin's t-storm thread Christmas eve you live in H-town.

I live in the Montrose area.

I used to live in SW/Meyerland/Westbury area. Good fricking restaurants in Montrose!

I just want to say, hmmmm hmmmm good.

Indian Curry is my favorite. Haven't cooked that up in a long time.

The best beverage I found to go with curry is, believe it or not, a German wine. Liebfraumilch

I'm thinking of something else. A smallish restaurant, wooden floors, right at the split. To-die-for pitas. I moved 5 years ago, but I reeeeeeally miss those pitas. tounge

I'm not good at remembering names, but I could still drive right there with my eyes closed, no doubt. I used to work at the Lyric Center, quick trip for my pita fix. ;)

I'm crappy with name too. Yes in the Montrose you can walk to great food from all over the world and the Grocery stores have a wide range of foreign foods. I'll stop in a Fiesta and see stuff in the produce dept that I have no idea what it is.

Fudge

3 cups white sugar
3/4 cup butter
sm. can evap.milk
12 oz bag semisweet cho.chips
7oz jar marshmallow cream
1tsp vanilla

1 cup chopped pecans if you like

Melt butter in microwave proof bowl(a large one) for 1 min. Stir in sugar and milk, microwave 3 min. stir,microwave2 min, stir, microwave 3 min, stir and finally microwave 2 1/2 min. Remove from microwave and stir in chips, marshmallow cream vanilla and nuts. pour in to pan quickly as it sets pretty fast. I sometimes poor in to paper cups cake cups and give as gifts, it looks really nice that way. This is very tasty for microwave fudge and is fool proof.
