Anonymous Coward User ID: 1207817 United States 12/26/2010 06:22 PM Report Abusive Post Report Copyright Violation | CURRY IN A HURRY Ingredients o 1 (10 ounce) packages frozen green beans o 1 1/2 cups matchstick carrots o 1 tablespoon vegetable oil o 1 medium onions, diced o 1 teaspoon curry powder o 2 teaspoons grated fresh ginger o 2 garlic cloves, minced o 1 cup chicken broth o 1/3 cup apricot preserves o 1 tablespoon cornstarch o 1 lb cooked chicken, cut into bite-size pieces o cooked rice Directions 1. Place green beans and carrots in medium glass bowl; cover and microwave 6 minutes. 2. Set aside. 3. In large nonstick skillet, heat oil over medium-high heat, add onion and curry powder, and cook, stirring occasionally, until onion is soft, about 6 minutes. 4. Stir in ginger and garlic, and cook 1 minute more. 5. Stir chicken broth and apricot preserves into skillet; bring to a boil. 6. In small bowl, combine cornstarch with 1 tablespoon water. 7. Whisk cornstarch mixture into skillet, and cook 1 minute longer. 8. Reduce heat to medium-low, stir in green beans, carrots, and chicken, and heat through. 9. Serve over rice. |

Sorry, I couldn't find my cans to give you a brand name. They are from Thailand. Different types - different color cans (green, yellow, red). (masaman, green, red) You mix the contents with cans of coconut milk, meat and veggies. I often use leftover meats and veggies. Excellent stuff. Seriously great stuff. Stir in sugar and milk, microwave 3 min. stir,microwave2 min, stir,microwave 3 min,stir and finally microwave 2 1/2 min. Remove from microwave and stir in chips, marshmallow cream vanilla and nuts. pour in to pan quickly as it sets pretty fast. I sometimes poor in to paper cups cake cups and give as gifts, it looks really nice that way. This is very tasty for microwave fudge and is fool proof. |
