I don't feel very good now, though.

But, my father threw out my stash of bacon grease (been building up over the years) so I had to start over. I bought 1 lb of bacon and slowcooked it over my cast iron skillet -- took about 20 mins per four slices of bacon. I have four left (which will be finished in 12 mins), but.... I just ate almost 1 lb of bacon...

I have a stainless steel grease container (with a screen sieve) and keep that puppy full year round.

Great for frying eggs (although coconut oil is out of this world good and the healthiest oil in the world - great for losing weight...organic coconut oil is the only thing that helps me budge my scale when eating less and exercising more won't drop the weight).

Bacon grease is also great for frying more bacon - creates a deep frying effect in the pan and cooks the bacon more thoroughly (although I bake my bacon these days in the oven on aluminum foil on a tray).

But the number one thing is for seasoning Soul Food! Great for cooking with green beans, baby lima beans, making a roux for seafood gumbo, gravy, bacon & potato soup, etc.

Good cooks know that bacon grease is a secret ingredient that adds sublime flavor. Emeril Lagasse says, "Pork Fat Rules!". The standard joke in the restaurant chain industry goes, "When in doubt, throw cheese and bacon on it."

Bacon fat is addictive! Arun Gupta of The Indypendent has pointed out how bacon possesses six ingredient types of umami, which elicits an addictive neurochemical response. According to Gupta "the chain lards on bacon" give foods a "high flavor profile" creating a "one-of-a-kind product that has no taste substitute." [link to en.wikipedia.org]

Sodium Nitrite Free bacon would be healthier.

I was on Atkins diet in the 90s and ate a pound of bacon several times. You actually start to think, this is wrong.

Finally lost weight by dieting and exercise. Atkins doesn't work.

Don't eat it very often, but bacon is good.
