This however does not distract from the reality that to the tempered taste fruitcakes are a delight and a wonderful part of the season. Though there are many that might snicker at all the fruitcake hub-bub on shelves, the fruitcakes are on the store shelfs because they are being removed and bought and consumed. The Fat stupid americans would rather eat a twinky or hosters and they of "cake" as devil's food. Ah, but this is not the truth nor is it the opionion of the elite. Fruitcakes are good for the soul. They are tasty and great to have and give and recieve as gift. And even if no one ever ate the fruitcakes you make, thought I am sure they have, it is still part of tradition, and that alone has its own value. |

Anonymous Coward (OP) User ID: 8171374 ![]() 11/07/2012 07:42 PM Report Abusive Post Report Copyright Violation | Organic -Gluten free fruit cake: Makes 1 (9 x 5-inch) fruitcake loaf Cook for about 65-75 minutes 1 cup finely ground blanched almonds >this is in place of white flour ; can use rice flour 1/2 cup raw sugar 1 teaspoon ground cardamom 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1/2 teaspoon sea salt 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1 cup chopped pecans 1 cup chopped walnuts 1 cup chopped almonds 2 cups finely chopped figs 1/2 to 1 cup chopped dried cherries 1/2 to 1 cup dried cranberries 3 large eggs, lightly beaten 1/4 cup maple syrup 1 tablespoon of almond extract, or vanilla extract Preheat oven to 300°F. Lightly grease a bread loaf pan and can use non stick papers Whisk together ground almonds, sugar, cardamom, nutmeg, cinnamon, salt, baking soda and baking powder in a large bowl. Stir in mixed nuts and dried fruits. In a separate medium bowl, whisk together eggs, maple syrup and brandy until smooth. Add to fruit/nut mixture; mix well until fully combined (batter will be thick). Spread batter into prepared pan evenly. Bake until fruitcake is brown and pulls away from sides of the pan, about 65 to 75 minutes. Remove from oven; cool on a wire rack 10 to 20 minutes. Remove from pan and cool completely on wire rack. Gluten Free = Wheat Flower. It's just that simple. There are many other flowers that can be a replacement. Then any recipies known to man can be "Gluten Free". |

PECAN FRUIT CAKE 1 lb. candied cherries 1 lb. candied pineapple 1 1/2 lbs. pitted dates 8 c. pecans, chopped 2 c. sifted cake flour 2 tsp. baking powder 1/2 tsp. salt 4 eggs 1 c. sugar Cut fruit and nuts into small pieces. Cream sugar and eggs. Sift together flour, salt and baking powder. Add flour mixture to eggs and sugar and mix well. Pour batter over fruit and mix. Add pecans to mixture and mix well. Pour into greased tube pan. Preheat oven and cook at 275 degrees for 1 hour and 15 minutes. recipe from...
