Don't be turned off by the simplicity: - Equal parts cream cheese & sour cream (I use 16 & 16 oz servings) - 1 packet taco seasoning (Ortega will do) Use blender to mix the cream cheese & sour cream together while adding the taco seasoning. Blend until desired consistency Pour into serving container and top with shredded cheese of your choosing. Can also add toppings like shredded lettuce, diced black olives, diced tomatoes, diced jalapenos, etc. Serve chilled. I know it sounds too ridiculously simple for it to be good but trust me, it's amazing. (cooking is "my thing" so this post is right up my alley :) ) Would you mind sharing recipes for the dishes I put in bold type? I love spinach and watermelon and I'm always happy to find something else to do with the surplus from the garden. Watermelon salsa: 2 cups seeded finely chopped watermelon 1/2 cup finely chopped cucumber 1/4 cup finely chopped red onion 1/4 cup finely chopped sweet red pepper 1 jalapeño pepper seeded and minced (sometimes I leave a few seeds for heat) 1/4 cup fresh cilantro minced 1tbsp fresh basil minced 1 tbsp fresh mint minced 2 tbsp honey 1 tsp lime (or lemon) juice Mix together best if chilled for a few hours or over night for flavors to marry. Spinach balls. This recipe was always something we ate as kids, it was made from peperidge farm stuffing and frozen spinach. As I've grown into my adult palate :) I've changed it a bit. 2 cups of seasoned stuffing mix (or homemade stuffing, stale bread and seasonings) 1 small onion chopped 4 eggs beaten 3/4 cup margarine ( I used real butter) 1/2 tsp garlic ( I use a whole clove from the garden) 1/2 tsp salt 1tsp (scant) herb de Provence (or some thyme, rosemary, fennel mixed together) 1/2 cup freshly grated Parmesan 2 boxes of frozen spinach cookeded and squeezed dry ( I use fresh and you'll have to forgive me because I eyeball everything, takes a good bit to equal two boxes worth but it's well worth using fresh rather than frozen) Make sure you squeeze as muc liquid as you can out with cheese cloth or tea towel. Mix everything together let set in fridge for at least an hour, roll into balls (bite size) bake 15-20 minutes @ 350. 1/2 Thanks! And don't worry, I cook the same way. Everything is to taste for me So I get it. I also prefer fresh spinach and usually end up with more than I can manage to eat fresh during the summer. I'm not a huge fan of cooked spinach unless its in dips. This sounds like something I'd like though. Anonymous Coward User ID: 27935470 United States 11/17/2012 11:09 AM Report Abusive Post Report Copyright Violation | Chicken Satay with Peanut Sauce Recipe Ingredients Marinade: 1 cup plain yogurt 1 teaspoon fresh grated ginger 1 teaspoon minced garlic 1 tablespoon curry powder 1 1/2 pounds skinless/boneless chicken breasts, cut into strips About 20 wooden skewers, soaked in water 30 minutes Vegetable oil, for grill Lettuce leaves Fresh cilantro leaves optional Peanut sauce, recipe follows Combine the yogurt, ginger, garlic, and curry powder in a shallow mixing bowl, stir to combine. Marinate the chicken strips by gently tossing until well coated. Cover and marinate chicken in refrigerator for at up to 2 hrs. Thread the chicken pieces onto skewers working the skewer in and out of the meat, down the middle of the piece, so that it stays in place during grilling. Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the chicken for 3 to 5 minutes on each side. Serve the satays on a platter optionally lined with lettuce leaves and cilantro; accompanied by a small bowl of peanut sauce on the side. Peanut Sauce: 1 cup smooth peanut butter 1/4 cup soy sauce 2 teaspoons red chili paste 2 tablespoons dark brown sugar 2 limes, juiced 1/2 cup hot water 1/4 cup chopped peanuts, for garnish optional Combine peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, (may not need all of it). Pour the sauce into a serving bowl and garnish with the chopped peanuts. Serve with chicken satay. |
