Trick to keeping omelettes from breaking when you plate?
Tried to make one today without flipping, placed a lid on the pan and waited till it was just about done to try and plate. I had a hard time though, and the thing kinda fell apart when I tried to do it. It was slightly runny too may not have been entirely done, not sure. Tasted decent enough though, just wish it had held together. Any tips on how to keep them from breaking?

I just fold 'em up, carefully, when still in the frying pan.

Quality eggs.
Red hot 'seasoned' pan.
Not too much milk/cream if at all.
Fold when nearly done then tip the pan & slide when you plate the omelette.

It should be almost impossible to fuck up an omelette!

Scrambling egg yolks is bad as it cooks through all the cholesterol. Sunny side up and runny is much better for you. There was a study recently equating eating eggs to smoking cigarettes. I'd like to bet the majority of those eggs were scrambled. Also, eat cage free organic eggs. Most eggs are really bad as the animal gets no sunlight and none of the sun's energy. Free range chicks eat bugs and all kinds of natural things that commercial chickens are denied.

LOL...just put a plate upon it and flip over the the pan, your omellette is now perfect, beware not to touch the hot pan, that's all.

It's angered remarks like this that make me question which way our planet is heading. I'm just telling the truth, breaking apart egg yolks and cooking them through is very bad for your arteries. But at the end of the day it's your health not mine. I however look like this because I know just about everything concerning "dietary bullshit."
