here you go Simple,,,,be brave, try the Brussels sprouts,,,they're good especially cooked this way....
LEMON LEMON Chicken easy,,,but read recipe before starting, see turnings and temps
Pre-heat the oven to 350 degrees.
Use a medium chicken - if the chicken is large you will need more roasting time for the period during the 350 degree setting.
Wash chicken, trim off fat, salt and pepper in the cavity.
Juice 5 lemons, keep the rinds.
Put the rinds into the cavity of chicken and tie the legs together.
Salt & pepper the whole chicken and put crushed rosemary on.
Put the chicken
breast-side down in an open roasting pan.
Set timer for 30 minutes.
Pour half of the lemon juice over the chicken, put in oven.
After the 30 minutes, turn the chicken
breast-side up and pour the rest of the lemon juice on it.
Set timer for 30 minutes and continue to roast.
At the end of this period, set the timer the 3rd time for 30 minutes, (baste with the juices) and
TURN UP THE HEAT TO 400 deg. Continue to roast the chicken, toward the end it will brown quickly.
Remove, cover with foil and let rest for 10 minutes.
Serve with the juices drizzled over....
GARLIC FRIED BRUSSELS SPROUTSTrim sprouts and cut in half lengthwise
Prepare garlic butter while chicken is baking
In large fry pan, put plenty of butter and very generous garlic slices....like 5 large cloves, sliced
Cook garlic until well infused but not burnt
Remove garlic with slotted spoon and discard
Put the sprouts, flat side down in the butter and wait til' chicken is done & resting under foil.
Then fry the sprouts until very brown on the bottom, adding more butter if necessary. Then toss in any remaining butter and serve with chicken.
