Fatty beef cuts make the meat tender, juicy and flavorful. You can cut fat off after cooking. But cook them with fat strip on.

Me too, I've always cooked beef with the fat on. I cut it off afterwards.

Chicken on the other hand...I cut the fat off prior to cooking.

We used to raise our own fryers, but quit maybe 20 years ago. I almost can't stand the chicken we get these days. There is no comparison to a home raised chicken. Big Ag sucks, imho.

Agree with that one Big D.. I used to raise my own chicks.. and nothing like the store..
Maybe it was the freshness or food but damn.. they where good..
Plus I had a few Araucana which have the greenish eggs kind of cool.. My X wouldn't let me eat those..lol

Yes, no comparison. We used to have fried chicken every Sunday night! It was a treat! Now, I cringe when I hear we are having chicken! lol
