My two cents worth since I zest lemons for baking, you don't want the pith - it is bitter nasty stuff and will ruin anything you are making. I would save the inside, zest the peel and leave the pith. Still going through the article to see if I can find any use for the pith = white part. Everything else is goodness. I couldn't find anything that shows the white is worth anything. The peel actually means the yellow color of the lemon. Not the white. Some research is needed.
