A light frost this morning. It was gone by 8am. Despite that, Been in like low 40s overnight for a good two weeks now. I've started to notice the white and pink of a few random cheery blossoms this week, out and about around town. Birds are also starting to sound like spring in the early morning. Making their sexy song sounds to find a mate.

If you listen though you see that they are cuing off one another's first word and calculating what they presume the other is going to say from there. They are very skilled at it. I just wonder why this is so important to them.

I'll get one later in the week when they should be on sale. In the big bin of them, I noticed most of them were point cuts too. We all know flat cuts are the best, with the most fat.

I didn't even look to see how much a fresh uncured beef brisket was. My wallet could not handle that.

I'm not Irish. So when I make corn beef, I do it the Yankee way. I buy those already cured vacuum sealed ones, with the juice. I get a flat cut with all the fat alone the bottom. Carrots, red cabbage, lots of cracked pepper, little red potatoes, and it all goes in the crock pot for 8 hours.
