Good morning Arnie. That message was like a nice warm morning hug! How are you liking your new mattress? If your son is coming over Monday for dinner, I'd make the cowboy caviar on Sunday. It's not something that needs to sit or marinate for a long time, and in fact, too long might make it not as good. A day or overnight is usually enough. Not sure how it was eaten where Simple had it. Here, people make it as an appetizer or dip or sorts, eaten with tortilla chips. Could easily also be a side dish too. You'll enjoy it!
