PLUS you get all the healthy pectin that's just under the skin, not pared off,,so super nutritious !!! I kind of spazz on this every year, can't stop, just keep goinf.. also I do the steam bath in the big electric turkey roaster so don't take up stove space with the jar processing. I'll start this spazz-out in a couple weeks... make about 50-60 pints..  I love the skins of all fruits - apples, pears, peaches...I never peel any fruit that doesn't require it. Maybe you could do an applesauce-making demonstration at the block party with the apples Big D is bringing. I'll help out with the jars. Everyone gets a jar to take home at the end!
