Anyone have a tried and loved turkey gravy recipe?

I'm a Thanksgiving dinner rookie! Nef can do the turkey, but I'd like to help out with some sides (and gravy) if we end up doing this here. I need a good gravy recipe! :)
 Quoting: Simple27

The gravy I have made, that my mom, grandma and great-grandma have made is simple:

Pour roasted turkey drippings through a sieve into a pot.
Add salt, pepper, a small pinch of sage and see how it tastes.
Add 2-4 Tablespoons of corn starch
Bring to a boil, whisking constantly.
If it doesn't thicken like you want, add more corn starch but put it in a small glass of cold water and mix thoroughly and then add a little at a time till the gravy thickens.

My husband seasons the turkey with garlic and onion, so I don't need to add those to the gravy but if you didn't, add a little of those to taste.

Viola!!!

ps we make a huge pot of gravy so I usually add 1/4 cup or more of corn starch to thicken in the beginning.

That sounds perfect KickinIt. I’m going to keep that in mind for next year. I was happy to find something different. What sides are ya makin?
 Quoting: Isis One

Traditional sides - stuffing, mashed potatoes/gravy, fresh cranberries, green bean casserole and Thanksgiving slaw. I decided to make a different dessert this year that's easy to scale back, since it's just 2 of us. I'm making individual pumpkin cheesecakes w/gingersnap crust using muffin tins.

Here's the slaw recipe in case you or anyone else is interested. I think I shared this here last year. It was a new item last Thanksgiving and everyone loved it. It's yummy, and the cold/crisp aspect was a nice addition.

Your dessert sounds delicious! So doesn't that slaw. I might try that this year. :)

Shit is a big mess right now here. My youngest sister who just had the baby is sick. Cold symptoms so no big deal, but she's completely lost her taste and smell. Her taste/smell disappeared yesterday but she's had the cold symptoms for a few days. She got tested yesterday, as well as her husband and also my parents because they babysit and have obviously had contact with the baby and my sister. The baby is now sick too. They brought him to the doctor today and the doctor said his lungs sound good but they tested him too.

My parents usually host Thanksgiving dinner, but it's not looking like that's gonna work out. Luckily we bought a turkey just in case something like this happened last minute. So we'll have dinner at home if any of them come back positive. I'm pretty sure my sister has it. :\
 Quoting: Simple27

That sounds like a huge mess.

Keep it simple like we are this year - or at least planned on - lol

We planned on a simple dinner this year:
Turkey
Gravy
Mashed potatoes
Salad
Ranch dressing, homemade
Cranberry sauce
Yeast rolls - family would mutiny if I didn't make those!!
Pumpkin pies

That was going to be all, then daughter says "but what about your famous cornbread stuffing?" Then son adds "with stuffed cream cheese celery and devil eggs, Right?" Husband said, "you left Watergate salad off the list, after all, that is easy peasy."

So my son is making the Watergate salad since it is easy and his sister will direct him while she is making biscuits and cornbread for the stuffing. Hubby will boil and peel the eggs ( I HATE PEELING EGGS WITH A PASSION) and chop up the onion. I will de-fiber the celery, keep some for the stuffing and son will put the cream cheese in the celery.

Hey, they want the extra stuff, they are gonna work for it!

Sorry to hear this, Simple! Prayers for all of them!

End of 2019 or early January (I've slept since then! lol) hubby and I both got sick. Worst flu symptoms ever, but also had the loss of taste/smell. Hubby saw doctor first - tested for flu but came back negative. A week later I went in, and I tested positive for flu A! Took one of the flu meds and was better in only a few days. Looking back now, I think it was covid.

I remember you sharing that back then! I believe a few folks here shared about having a terrible flu-like/pneumonia type illness shortly before Covid was known about that very well may have been Covid. Mini too. She was real sick last December-ish. She needed breathing treatments and an inhaler. Nothing helped her until they gave her steroids. Who knows. But I definitely pay attention to all of your posts and my brain doesn't stop, ever. Always trying to connect dots and whatnot.

 Quoting: Simple27

You don't need a recipe for turkey gravy,,it's a process.
In the morning put the neck, giblets etc, in a pan with a carton chicken broth and couple cups water.
Add couple carrots, couple celery stalks and couple onions...boil, then low simmer, covered for the morning hours.
Strain the liquid to a blender picher,,discard veggies, cut giblets, and pick meat from neck, carefully, careful of small bones. Add these bits to blender and blend until smooth. Set aside.
Save your mashed potato boiling water for gravy.

Remove turkey to platter, rest under foil or in warm oven.

Pour out any excess fat, leave some for taste, your call.
Add giblet mix and some of the potato water to the pan.

Whisk in 1/3 cup flour to some of the potato water., add to pan
Bring to boil.
Add salt / pepper.
Now, add 2 teaspoons granular beef bouillon.
Stir, taste,more bouillon, taste
Ask for another taster, more salt ? pepper? bouillon?

If you want it thicker, add couple tablespoons flour whisked into 1/4 cup COLD water, add to gravy.

Thinner? Add more chicken broth or potato water.

After a few times doing Thanksgiving, you get it, and join
the exclusive club of old-lady gravy makers !!

BRIGHTENING COMET ERASMUS: Every 2000 years, Comet Erasmus (C/2020 S3) visits the inner Solar System. News Flash: It's back. Discovered on Sept. 17, 2020, by South African astronomer Nicolas Erasmus, the dirty snowball is plunging toward the sun for a close encounter inside the orbit of Mercury on Dec. 12th.

This is what it looks like:

https://imgur.com/RQGoMP1

Gerald Rhemann took the picture Friday morning, Nov. 20th, using a 12-inch telescope in Farm Tivoli, Namibia. "The tail is magnificent," he says. "In fact, I couldn't fit it in a single field of view. This two-panel composite shows the first 3 degrees--and it keeps going well past the edge of the photo."

Comet Erasmus is brightening as it approaches the sun. Right now it is 7th magnitude--an easy target for backyard telescopes. Forecasters believe it will more than triple in brightness to 5th magnitude by the time it dips inside the orbit of Mercury next month. Only the glare of the nearby sun will prevent it from being visible to the naked eye.

Where should you look? If you can find Venus, you can find the comet. Look low and southeast before sunrise. Comet Erasmus is in the constellation Hydra just to the right of Venus in neighboring Virgo. The bright star Spica is nearby, too, providing another useful reference point.

Hi Isis. The split breast is a great idea. Here at my home it will be just husband and I.

Making the traditional meal with the smallest turkey I could find.

The holidays are upon us already.

I'll be glad when 2020 ends. LOL. Things are looking much better for the coming year.

hugs

Hi finely! Isn’t it nice just to have an intimate little dinner for two? So many years of big gatherings and being exhausted. It can be nice to go low key sometimes.

That sounds perfect KickinIt. I’m going to keep that in mind for next year. I was happy to find something different. What sides are ya makin?
