I'll tell you what I did to our builders grade oak cabinets. I wanted a smooth look that didn't look like "do it yourself" painted cabinets. It is some work.
Remove all cabinet doors (keep track of where they go). Sand down with 120 grit sandpaper. Get an electric palm sander. It will be more than worth it. You're not trying to get it down to bare wood, just dull out the varnish coating.
I got some DAP premium wood filler to fill in all the wood grain pores so I would have a smooth finish. Mix it with water until the consistency of paint and brush it on. Use thin coats, sand with 320 grit between coats and after last coat until smooth.
I sprayed my cabinet doors with an hvlp gravity feed paint gun with an air compressor. I put up a clothes line in the back yard, used small eyelets (the round part from a latch and eye for like a screen door) Top cabinets put the eye on top and the bottom cabinets put the eye on the bottom and hang the door upside down. I used tie wire to go from the eyelet to the clothes line.
Used blow nozzle to blow off dust from doors and wiped down with a tack cloth.
Sprayed two coats of oil based primer thinned out 10to1 with mineral spirits. Sanded with 320 grit between coats and blown and wiped with tack cloth.
Finally sprayed two coats of Pro Classic oil based semi-gloss thinned out about the same.

The cabinet boxes have a veneer laminate on them scuff up a little with 320 and used a 1/4" foam roller to apply oil based primer and top coat. 2 coats each with light sanding between.

All in all it's basically a shit ton of sanding and a little bit of painting.
The paint is hard and smooth and can clean with a soap and rag without anything peeling up.
