What altitude are they at I wonder? The higher the altitude the lower the boiling point due to lack of atmospheric pressure.

Its not rocket science,the dudes got calloused hands the hard skin acts to insulate his fingers against the heat.Notice that he only dips his fingers in for a short wile.
I worked in a foundry in my early days and you could do the exact same thing with molten aluminium,granted you had to wear leather gloves but the temperature of the ally was nudging 700 degrees c.

I do this all the time. It is hot and mildly painful but as long as it's only for an instant no harm.

Found out when I absent minded used my fingers instead of tongs. Was like "oh fuckin shit! How stupid" then realized I was ok.

tbh I'm not too amazed, I'm a chef (write that down data miners) and while I don't dip my fingers into the actual fryer your hands do become seriously immune to heat after a while, I regularly pick up stuff that has literally just come up from the oil... still coated in it.

But the top level of the oil is not as hot as you might think anyway and I notice his fingertips are well coated in batter.

It's a nice gimmick but not anything really amazing tbh.

I knew a woman who worked as a bagel maker when she was in college and she swears that after awhile, you just start plucking the bagels out of the boiling water and you build up a tolerance to it over time.

This is after I saw her pluck something out of a pot of boiling water while I was watching. I would never have believed it either had I not seen it.

They don't appear to have burns on there hands but it does look like Calluses(layers of built up skin).

I had this as a kid runnin around barefoot a lot. I could walk over anything sharp, cold or hot and didn't feel or get cut. The thick skin acts as a natural layer of production and will only keep getting tougher if you keep at it.

When I used to work in restaurants I developed a resistance to heat in my hands, as well. I could pick up searing hot pans and plates with no discomfort and no burning or blistering. I have retained some of this ability to this day 20 years later.

Maybe he has a circulatory disorder that causes his hands to be very cold.

I was diagnosed with a circulatory disorder that is a cousin of Raynaud's. My fingertips would turn blue, and my hands and feet were always ice cold. I had to move to a warm climate, because my doctor said I was in danger of getting gangrene in the winter.

When I was at my worst, I could take burning hot pans out of the oven with my bare hands. Not quick grabs and drops either; I could hold onto them for several seconds without being burned. In fact, the sensation was nice. That, and running my hands under scalding hot water, got the circulation back into my fingers again. I will admit, I never dipped my hands in boiling oil, though grease splatters never bothered me.

I can't do that stuff anymore though. Living in the tropics seems to have cured me.
