QUICK AND EASY CINNAMON CAKE:

1 cup sugar
2 cups flour
1 cup buttermilk
1/3 cup oil
1 egg
1 tsp. baking soda
dash of salt
1 Tbsp. cinnamon (I use 3 Tbsp.)

If you wish, you may add 1 tsp. of vanilla or some another extract to wet ingredients or some vanilla sugar to dry ingredients.

I will be translating now, so please forgive me my grammar.
This cake always coming well. The secret to it is in mixing dry and wet ingredients separately.

- From 1 cup of sugar take 2 Tbsp. sugar and mix with the cinnamon. Put aside.
- In a bowl mix flour with the remaining sugar, baking soda and salt.
- In separate bowl mix egg, oil and buttermilk. Add to dry ingredients and mix all together.
- Grease medium size loaf baking pan and add half of the batter. Sprinkle all over with half amount of mixed sugar with cinnamon.
- Add slowly on top rest of the batter and sprinkle again all over with the remaining half of mixed sugar with cinnamon.
- Cut the batter in the baking pan few times both sides with a knife to mix white and dark batter together little bit together, not to much.
- Bake in preheated oven at 350-360 F for approximately 40-50 minutes.

ZEBRA CAKE:

1/2 cup hot water
2 and 1/2 cups flour
2 cups sugar
1 cup oil
5 eggs
3 tsp. baking powder
3 Tbsp. cocoa

- Preheat oven to 350 F.
- Grease springform pan and sprinkle lightly with flour or bread crumbs.
- Beat eggs together with sugar. Add flour, baking powder and slowly oil with water.
- Divide batter in two. To one half add 3 Tbsp. cocoa and to other half 3 Tbsp. flour.
- Put in the middle of springform pan alternately white batter with dark batter.
- Bake approximately for 50-60 minutes.
- When the cake cool down, sprinkle on top with icing sugar.

Your welcome Phenn! I am glad that you want to try doing it. After posting this receipt, I couldn't wait any longer and made the lard/bacon spread myself. I just finished eating fresh baguette with it and going to have one more slice and of course, more lemon tea.

The lard and bacon should be melted and crispy, but not burned. The onions and after apples must be added at the right time. Anyway, I can tell that you know your way in the kitchen.

I am planning to do yours "Personalize Meat Loafs" next week and let you know how they came out. Thanks!

CHICKEN CASSEROLE BY CANDY SPELLING:

Well, she is a multimillionaire but her casserole is not expensive, quick to prepare and tasty. I made it 3 or 4 times but I buy boneless/skinless chicken breast and cut them in 4 pieces. Please, make sure to not add any salt as the onion soup and beef consomme' is already salty.

INGREDIENTS:
1 cup raw rice
1 fryer chicken, cut up
1 Package onion soup, undiluted
1 can beef consomme’
1 can cream of mushroom soup
1 can water

DIRECTIONS:

Preheat oven to 350 degrees. Grease a 3-quart casserole dish. Pour all of the raw rice in the casserole dish, then place the chicken parts on top of the rice. Sprinkle the package of onion soup on top of the chicken, followed by the beef consomme’, then the cream of mushroom soup, then 1 can of water. Do not mix these ingredients. Place in preheated oven uncovered for 1 1/2 hours. Cover with foil and return to oven for another 1/2 hour. Remove and Serve.

Bacon Spaghetti


Ingredients:
1 large onion, diced (any but red will do)

2 (14.5 oz) cans of diced tomatoes

1lb bacon

1lb thin spaghetti (use whole wheat for a boost in whole grains, fiber and nutrients)

Salt & Pepper to taste
Directions:
1. Trim the fat from the ends of the slab of bacon. Cut the raw bacon into bite sized pieces. This is easier to do if you cut the rashers while they are still stuck together instead of trying to cut each individual slice. In a frying pan with deep sides and a lid, fry the pieces until cooked through, but not crisp. It should still be chewy. Remove the bacon to a paper towel to drain. Leave a tablespoon or two of bacon grease in the pan, discarding the rest (or save it for other recipes!).

2. Cook the diced onion in the same pan over medium-low heat until translucent.

3. Add the diced tomatoes. Refill each can with water and add to the pan. This will help to create a sauce. Bring to a simmer.

4. Add the cooked bacon back into the pan.

5. Add the spaghetti, making sure it is completely covered with the liquid. Add a little more water if necessary, but it is not supposed to be watery. Just enough to cover the pasta. Cover the pan with a lid and let simmer until the pasta is cooked through to your taste (usually about 8-10 minutes, a little longer for whole wheat pasta).

6. Serve hot and add salt and pepper to taste.
NOTE: This recipe can be tricky to get just right in terms of sauce and getting the bacon to the right doneness to your preference. It should work out if these instructions are followed, and then can be tweaked to your taste. DO NOT ADD TOO MUCH WATER! It will look like there is not enough in the pan, but push the pasta down (it will break and that is OK!) and just make sure there are no large areas exposed. It WILL work out!

13 BEAN SOUP:

1 pkg. of 13 Bean Soup Mix (I buy USA product “Bob’s Red Mill” for under $5.00)
1 large chopped carrot
1 large chopped onion fried lightly with 2 spoons of oil
1 large chopped green pepper or celery
2-3 chopped clove of garlic
4-5 potatoes peeled and cut in medium pieces
vegetable broth or Knorr cube
2-3 large tomatoes
*Soak tomatoes in very hot water and take the skin off. Cut them in pieces and fry lightly with a dash of brown sugar for 2-3 minutes.

I like to use those spices in my kitchen:
salt, pepper, bay leaf, cumin, nutmeg, all spices, seasoned salt and Worcestershire sauce

- Soak the package of beans for 4-5 hours in cold water
- Boil large pot of water, add the beans and spices and cook for 20-30 minutes.
- Add all other ingredients (no potatoes) and simmer.
- When the beans become almost cooked, add potatoes and simmer for another 10-15 minutes.

After turning the heat off, you may add table spoon of lemon juice and chopped green parsley or fresh dill to taste.

If you are not vegetarian you may substitute vegetable broth for chicken/beef broth. You may add at the beginning pieces of ham or sausage (or) chopped fried crispy smoke bacon at the very end. Personally, I don’t add any meat because the soup is very tasty and fulfilling itself. This is under 10 dollars dinner for 6-8 people. My favorite soup and I am cooking it today. My neighbor is already waiting.... LOL.

HOME MADE CESAR SALAD:

1 head Romaine lettuce washed, dried and broken into bite size pieces

DRESSING:

1 lemon
1/3 cup olive oil
1/3 cup ground parmesan cheese
1 egg’'
1 chopped clove garlic

- Mix lemon juice with oil
- Add egg and beat together
- Add garlic and cheese, mix.

CROUTONS:

- Italian or French bread cut into small squares
- 1 chopped clove garlic
- Dash of Seasoned Salt

Fry on very low heat (no oil) stirring constantly bread with garlic and seasoned salt till it become golden light in color.

BRUSCHETTA:

- Slices of Italian or French bread or baguette
- Olive oil
- Slices of garlic
- Slices of tomatoes
- Slices of yellow cheese
*I use shredded "Asiago" but kids may not like it as it has strong taste and any cheese would be fine
- Fresh or dry basil
- Salt and pepper

Spread olive oil generously on one side of bread slices. Sprinkle with basil and put few slices of garlic on each. Then put tomatoes slices, sprinkle little bit with salt and pepper. Put cheese on top and bake at 400 F in preheated oven (middle rack) for 5-6 minutes. Turn the oven knobs to broil and broil (still on middle rack) for a minute or two checking constantly to not burn. When the cheese is melted, it’s done.

If you don't have or don't like cheese, just bake them without it.

After taking bruschettas from the oven and cooling them little bit, you may put on top any cold cuts. Salami slices go well with it.

Some cheap and easy deserts (mostly for kids)

Ice pops
Dissolve a packet of favoured gelatin or a few squares of jelly with some milk in a pot. Adjust to taste. Once it dissolves, pour it into ice pop molds or plastic cups with spoons in them. Freeze.

Fruit kebabs
Thread any fruit, fresh or canned, onto skewers and sprinkle them with cinnamon or all spice. Grill until they are hot but not browned. Serve with ice cream.

Apple pie
Heat some stewed apple or apple sauce. Slice a croissant open and toast it. Pour the apple into the croissant and top with fresh or iced cream.

Chocolate pears
Heat a tin of canned pears in the juice of the can in a pot or microwave. When hot, drain the juice off and place small pieces of chocolate on top to melt. Heat it a little more if the chocolate isn't soft.

Biscuit cake
Crumble a packet of plain biscuits/cookies. Melt the equivalent in chocolate. Combine the two and putin the fridge for for 3-4 hours. Cut into slices.

Frozen fruit
Roll fruit in sugar and freeze. Serve with yogurt.

Smushy chicken livers...yummm...flavour to taste and play with the recipe...

12 oz (340 g) chicken livers
2 tbsp (30 mL) butter
1/3 cup (75 mL) sliced shallots or onion
2 tbsp (30 mL) brandy
2 tbsp (30 mL) whipping cream
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
1 pinch ground nutmeg

Ground up and eat with crusty bread...

Some cheap and easy deserts (mostly for kids)

Ice pops
Dissolve a packet of favoured gelatin or a few squares of jelly with some milk in a pot. Adjust to taste. Once it dissolves, pour it into ice pop molds or plastic cups with spoons in them. Freeze.

Fruit kebabs
Thread any fruit, fresh or canned, onto skewers and sprinkle them with cinnamon or all spice. Grill until they are hot but not browned. Serve with ice cream.

Apple pie
Heat some stewed apple or apple sauce. Slice a croissant open and toast it. Pour the apple into the croissant and top with fresh or iced cream.

Chocolate pears
Heat a tin of canned pears in the juice of the can in a pot or microwave. When hot, drain the juice off and place small pieces of chocolate on top to melt. Heat it a little more if the chocolate isn't soft.

Biscuit cake
Crumble a packet of plain biscuits/cookies. Melt the equivalent in chocolate. Combine the two and putin the fridge for for 3-4 hours. Cut into slices.

Frozen fruit
Roll fruit in sugar and freeze. Serve with yogurt.

Very nice ideas for fast desserts. I have one which my mom used to do when I was a kid.

ANGEL DESERT:

2 pkg. jello with the flavor of your choice
1/2 cup egg whites
1 Tbsp. sugar

- Dissolve 2 package jello in half amount of hot water which the receipt says on the package and 1 Tbsp. sugar.
- When the jello start to hardening just little bit, beat very well with mixer 1/2 cup of egg whites.
- Add slowly beaten egg whites to the jello mixing all the time with mixer.
- Put in shallow glasses and to the fridge for approximately 30-40 minutes before serving.

I think you are describing something we ate as kids but it was bought in a packet and made with milk. It was called the same thing. It was strawberry favoured.

Ok, one more for today!

POTATOES HAMBURGERS:

1 kg cooked potatoes
2 eggs
2 Tbsp. flour
salt and pepper
bread crumbs for coating
oil for frying
2 spoons chopped fresh dill or green parsley or both (optional)

- Mash cooked potatoes with masher or fork. Add eggs, flour, salt and pepper, mix well.
- Form hamburgers, coat in bread crumbs and fry on both sides in oil.

You may use for this receipt left over potatoes from the day before. They can be eaten as they are or with sour cream or any gravy on the top, with salad on the side, with fried eggs or few slices of fried smoke bacon. As someone posted on this thread previously, "use your imagination".

Yes, you are right! You could buy them in packages. Hence, in the late eighties when "Solidarnosc" wanted to get rid of communism, Polish government surprised us with martial law and empty shelves in stores to "weaken" the people. But of course, they were not successful.

Anyway, at that time, my mom and all other mothers were using their brains and skills (sharing ideas) to do "something from nothing" and this is where this receipt is from. And as you know, it's really good and even better if you shred some chocolate on the top :))

ZEBRA CAKE:

1/2 cup hot water
2 and 1/2 cups flour
2 cups sugar
1 cup oil
5 eggs
3 tsp. baking powder
3 Tbsp. cocoa

- Preheat oven to 350 F.
- Grease springform pan and sprinkle lightly with flour or bread crumbs.
- Beat eggs together with sugar. Add flour, baking powder and slowly oil with water.
- Divide batter in two. To one half add 3 Tbsp. cocoa and to other half 3 Tbsp. flour.
- Put in the middle of springform pan alternately white batter with dark batter.
- Bake approximately for 50-60 minutes.
- When the cake cool down, sprinkle on top with icing sugar.

Creamy Chicken Lasagna
12 Lasagna noodles
1/3 cup milk
2 cans ( 10 3/4 oz each) condensed cream of chicken soup
½ teaspoon dried basil leaves...I use a generous amount of the freeze dried basil when I have it.
1/4 teaspoon pepper
1 12oz container small curd cottage cheese
3 cups cooked diced chicken
2 cups shredded mozzarella
1 cup shredded cheddar
½ cup grated parmesan cheese

spray bottom of 13 x 9 glass baking dish
cook and drain Lasagna noodles as directed on pckg
In bowl, mix soup, basil, pepper and milk
place 4 noodles on bottom of baking dish, top with 1 cup of soup mixture, ½ the cottage cheese, 1 ½ cups chicken 2/3 cup mozzarella, 1/3 cup of cheddar. Repeat layer once.
Place 4 remaining noodles on top with remaining soup mixture, mozzarella, and cheddar. Sprinkle Parmesan cheese over top.
Bake at 350 for about 50 min. let stand 15 min. before cutting

This is a family favorite that takes to work well the next day. Also freezes well but needs to be defrosted before cooking or the cheese burns.

I showed my 6yr old daughter Kinga's zebra cake and she thought it was so cool. She's into Monster High and wants to ask Kinga how she can add red food colouring so it can bleed.

I know. I don't need parental advice. :-)

So, anyone any ideas? O.P. or anyone willing to help, have you any ideas?
