I make something like a poor man's supper.

1 pk of hotdogs, sliced
1 medium onion, diced
1 green pepper diced
1 can of tomato soup
3 large potatoes peeled and diced
water
salt and pepper to taste

Cook onions and green peppers until soft and add hotdogs and potatoes and enough water to cover about 2 1/2 cups.

Cook hotdogs and potatoes in water until potatoes are just getting soft.

Add 1 can of tomato soup to the mixture and add salt and pepper to your liking cook for about 10 mins until potatoes are done. Serve with biscuits or loaf bread.

HOTDOG CREPES


Ingredients:

1/2 cup all purpose flour
1/2 cup milk
1/4 cup lukewarm water
2 large eggs
2 Tbsp. butter, melted or oil
pinch of salt
margarine or oil for frying

hotdogs
slices of yellow cheese (optional)

Preparation:

- In a blender or food processor, combine all ingredients until smooth. Transfer to a bowl, cover with plastic wrap and let rest for 30 minutes so the liquid can be absorbed by the flour.

- Using a 2-ounce ladle (the crêpes should be thin), portion out batter into a skillet that has been very lightly coated with margarine. Rotate pan and swirl batter until it covers the entire bottom of skillet. Fry until lightly golden in colour and then turn and fry second side.

- On each crêpe place slice or two of yellow cheese and one hotdog on top and then roll them.

- Bake at 350 C for 15 minutes (for hotdogs to get hot and for cheese to melt) in preheated oven or fry in skillet with little bit of oil/margarine on both sides.

- Serve with ketchup or sauce of your choice.

This soup is well suited to summer and you can eat it hot, lukewarm or cold.

BERRY SOUP

Ingredients:

1 can of blueberries or cherries pie filing
8-10 cups of water
sugar to your taste
1/4 tsp. salt
1/3-1/2 cup sour cream
1/2 tsp. vanilla sugar (optional)
1/2 tsp. cinnamon (optional)
1/2 tsp. lemon juice (optional)
pasta, cooked a la dente

Preparation:


- Bring water to a boil and add berries. Simmer for approximately 10-15 minutes.
- Add salt to taste, sugar, vanilla sugar and cinnamon.
- Turn the heat off and add sour cream.
- Serve with cooked pasta.

* Before adding sour cream to the soup, mix it with a little bit of soup in a small bowl first.
* You may replace pie filings with frozen berries.
* In summer I cook this soup using 2 cups of fresh fruits. In this case, before turning the heat off, thicken the soup with 2 Tbsp. of flour (all purpose or even better potato flour) mixed with little bit of water. You will need to add more sugar in fresh berries soup. The soup may also be purred. Colour will wary of the amount of sour cream. Heavy cream works fine too.

STRAWBERRY SOUP

Ingredients:

1 kg fresh strawberries
10 cups of water
1/3 - 1/2 cup sugar
1/3 – 1/2 cup sour cream
2 Tbsp. all purpose or potato flour
pasta, cooked separately a la dente

Preparation:

- Bring water to a boil. Add strawberries and cook till they are overcooked and then add sugar.
- Mix flour with little bit of water and thicken the soup. Simmer for 2 more minutes and turn the heat off.
- Mix sour cream with few spoons of soup and add to the pot.
- Puree the soup if you wish.
- Serve with cooked pasta.

Zucchini Scallion Cakes

1 medium zucchini, grated
2 scallions, thinly sliced
1/4 cup flour
1 teaspoon sugar
1/2 teaspoon salt
1 egg, beaten
1 tablespoon lemon juice
1/2 teaspoon lemon zest
2 tablespoons olive oil

Combine the grated zucchini, scallions, flour, sugar and salt together in a medium mixing bowl and toss to combine. Add the egg, lemon juice and zest and stir to combine.

Prepare a plate with a layer of paper towels. Place the olive oil in a large skillet over medium-high heat. Scoop tablespoons of zucchini scallion batter out into the oil, taking care to ensure space between the mounds of batter. You may have to fry the cakes in batches. Cook for about 1 minute on each side, or until the cakes have browned on both sides and are semi-firm. Transfer to the paper towel lined plate and repeat until you are out of batter.

CREPES WITH CREAM CHEESE

Ingredients for Batter:

2 cups all purpose or cake flour
1,5 cups of milk
1 cup of sparkling mineral water
2 eggs
pinch of salt
margarine or oil for frying

Ingredients for Filling:

1,5 cup white cheese
4 tbsp. icing sugar
1 tbsp. vanilla sugar
2 egg yolks
1 or 2 drops of aroma essence like for example orange or almond (optional)
raisins soaked overnight in rum (optional)

Preparations:

- In a mixer beat eggs, add milk and water and then gradually flour. In a skillet heat the margarine. Pour a portion of the dough, spread evenly over the bottom and fry on both sides. After frying the crêpes put one above the other on a flat plate. The crêpes should be very thin.

- Cream the cheese with the sugar, vanilla sugar and egg yolks until fluffy and eventually add optional ingredients. If it's too thick you should add a few tablespoons of milk.

- Spread prepared filling on crêpes and fold them in half and then again in half or just roll them.

* You may fry them lightly again with little bit of butter/margarine or warm up in the microwave. Ready crêpes sprinkle with powdered sugar and eventually cinnamon or with shredded chocolate on the top.

Instead of cream cheese you may fill crêpes with apples.

1 kg peeled apples cut in small squares
3 tbsp. water
2 tbsp. sugar
2 tsp. cinnamon
1 tsp. vanilla sugar

- Simmer apples with water and sugar for 15 minutes. At the end add cinnamon and vanilla sugar.

Sometimes I add 3 tsp. of cocoa powder to the batter and fill crêpes with both: Cream cheese and little bit of jam. Your kids will love them :))

BAKED RICED WITH APPLES AND CINNAMON

1 cup rice
1/4 tsp. salt
1,5 cup water
1,5 cup milk
3 apples, peeled and shredded
3 Tbsp. sugar (preferably brown)
1 tsp. vanilla sugar
1/2-1 tsp. cinnamon
2 Tbsp. butter or margarine
butter or margarine for baking dish

- Cook rice with water and milk with little bit of salt.
- Simmer lightly apples in frying pan together with 1 Tbsp. butter, sugar and cinnamon
- Spread butter all over glass or porcelain baking dish and put 1/3 of rice on the bottom, then 1/2 of apples and again 1/3 of rice and remaining 1/2 of apples and 1/3 of rice.
- Shred little bit of butter on the top and cover the dish with aluminum foil.
- Bake in preheated oven at 350 F for 20 minutes.
- Serve as it is or with yoghurt or whipped cream.

* If you use margarine instead of butter, then don’t add salt when cooking rice.

OR... You may put first at the bottom of the dish slices of banana and then 1/2 rice, apples and remaining 1/2 rice. Sprinkle some powdered chocolate or cocoa on the top after removing it from the oven and cooling little bit.

Something for hot summer days as a side dish with your potatoes or bread.

POLISH GAZPACHO

3 cups of plain yogurt or buttermilk
1 fresh cucumber
1/2 bunch chives
1/4 bunch fresh dill
5-6 radishes
3-4 cloves of garlic
1 Tbsp. olive oil
salt and pepper to taste
4-5 eggs, hard boiled and cut in four pieces

- Cut cucumber and radishes in small pieces and place in a large bowl, sprinkle with salt and put aside for 30 minutes, then squeeze the juice.
- Finely chop chives and dill, crush garlic and add to the bowl.
- Pour over cold yogurt or buttermilk, add olive oil and salt with pepper to taste, mix gently.
- Place gazpacho in separate smaller bowls and put eggs on the top.

* Instead of chopping cucumber and radishes you may shred them.
* Instead of adding hard boiled eggs to gazpacho you may fry them sunny side up and put on top of your mashed potatoes.

Made beef stock yesterday for french onion soup; smelled like brine, so I added some fresh apple, bayleaf and horseradish root.

Made it better.

For those who need to know: Vitamin C with your hotdog prevents the body from forming nitrosamines from Nitrates.

Evidence shows that if you consume Vitamin C along with these processed meats it can stop the formation of nitrosamines. But the Vitamin C has to be present at the time of consumption. If you wait several hours after taking Vitamin C, it will be gone from the digestive tract and not be of any help. It's also important to get extra Vitamin C so part of it will prevent the formation of nitrosamines and the other part will continue on its journey to other bodily processes that require Vitamin C to function.

Lately I bought 2 times frozen Hake Lions. This fish is from South Africa, so not to worry about mercury. It’s not expensive and taste similar to my favorite cod fish, crispy outside and tender inside. Once I made it in salsa and once in vegetables. You may use those recipes for any white fish fillets and eat hot or cold.

HAKE LIONS FILLETS IN SALSA

few hake lions fillets, washed and well dried
1 large white onion, chopped
3 large tomatoes, soaked in hot water, peeled and cut in chunks
1 green pepper, cut long-side in 8 strips and sliced
2-3 garlic cloves, chopped
flour
salt and pepper
bay leaf
dash of each to taste: Red paprika, allspice and nutmeg
few drops of Worcestershire sauce if you wish
oil for frying
1 tsp. lemon juice or few drops of white vinegar, optional

- Salt and pepper fillets and coat them in flour. Fry on both sides and put aside.
- In the same frying pan and remaining oil fry lightly onions, add green peppers and fry on very low heat for 5 more minutes. Add tomatoes, garlic, spices, few spoons of water and simmer all together till everything is tender and water evaporates. Add lemon juice or vinegar to make it more tangy, if you wish.
- Put salsa on top the fish and serve with potatoes, rice or pasta or eat cold with bread.

* You may add few pitted black olives at the time with tomatoes.

HAKE LIONS IN VEGETABLES

1 large white onion, chopped
1 large carrot, shredded on shredder with large holes
1 celery stick, chopped
2 Tbsp. tomato paste
2-3 garlic cloves
spices

- Repeat the process as above. Fry fish and then in the same oil onions, add celery, carrots, garlic, spices and little bit of water. Add tomato paste at the very end when everything is tender.

Cans of beans are awesome too, and quick. And I don't mean cans of beans with a bunch of seasonings, msg and other crap.

I'm talking black beans, kidney beans, pinto beans, navy beans, white beans etc. With low salt and Organic.

I buy these 10 for $10 at Smiths.

I also buy the whole cooked chickens they sell in the evenings. I shop at about 4 or 5 am when I get off work, so the whole chickens are reduced from like $8 to about $4.

Make a frittata, you can pretty much add any veggies or meat you want, which is great if you have left over meat and or veggies.

4 eggs
1/4 cup of milk
1 cup chopped veggies such as mushrooms, spinach, kale
1/2 cup chopped onion
1 cup chopped left over ham, cooked bacon, cooked sausage, chicken..
shredded cheese

Whisk eggs, add milk , then add other ingredients. Place in greased large cast iron pan, put in oven at 350 and cook until frittata rises and no longer runny.
