I survived on Top Ramen in college and I learned a few ways to add dimension (not to mention nutrition) to it.

Top Ramen Catch-All

3 or 4 packs of cooked Ramen noodles
8 to 12 eggs
Whatever veggies are hanging out in the fridge.

Cook the ramen, drain, and add season pack.
Mix with veggies, etc. Get creative.
Place into a greased casserole dish.
Wisk eggs and cover the whole mess.

Optional: Top with grated cheese.

Bake at 350 F for about 40 minutes.

Bon appetite.

I could post here every day. Freeze everything.

Essential item: freezer bags

The day you shop, cut your fruit and veg up into portionsand freeze. Rub a little olive oil on your veg to prevent freezer burn (nasty taste you get from frozen pizzas)

To prepare for dinners chop:
Bag of Onions
Bulb of Garlic
3-4 tins chopped tomatoes
Bag of potatoes
punnet of button mushrooms
Carrots
Any frozen veg
Thyme
Rosemary
Cajun Spices
Olive Oil
Curry spices

Take a giant spoonful of the veg (according to your liking) and add one tiny spoonful of spice to a freezer bag, label to your recipe and freeze. You can take a bag out each time, fry your meat, add a bag and boil some veg and pasta.
With meat, rice and pasta sheets, you have the ingredients for Curries, Spaghetti Bolognaise, Stew, Lasagne, Cajun Risotto, and Soups.

Add Tuna & breadcrumbs for a tuna bake.
(Put bread in smoother maker)

Add Eggs, Bacon & Breadcrumbs for Breakfast, French toast, Omelettes and meatballs.

Keep yourshopping list simple, freeze everything on the day of purchase and Google recipes on your favourite foods.

This is one of the best savings tips ever.
If you divide what you buy into baggies and put it away when you come from the store you will use a lot less groceries.

I started dividing ground beef into half lbs so it goes further.Almost every thing that calls for a lb of meat can be cut back without much notice.Chicken especially can be cut back just slice or chop the chicken pieces a bit smaller.To the person eating it it will look like they have plenty of meat as before.

I almost always use ground meat in spaghetti sauce because you use much less than using meat balls.

You will use much less food if you have variety in the meal too.A small piece of bread and just a bit of fruit on top of cake along with the main dish ,etc will fill you up and you still have a bit of variety..USE SMALLER PLATES.
Smaller plates tell your mind your plate is full and it is but a large plate makes you put more on your plate.A heaping small plate holds less than a not so heaping huge dinner plate.This is a great tip if you are trying to lose weight.

Occasionally amazon has a great deal on coconut oil.Sometimes in their coupon section there will be an additional percentage off if you click the coupon.
I watch for the price to go down then look for a coupon.I can usually stay stocked up by checking there.

Awesome thread, Phen!

I will say that nothing can help save money like stocking up on sales. Once you are down to your last few dollars and need groceries, you are screwed, IMO. You need to squirrel away a bit of money and keep it squirrelled. Then, when you go shopping and see one of those fabulous sale, like meat for 99 cents a pound, you can really fill the freezer. I have often gone grocery shopping and spent big bucks on meat because the price was too good. Like $5 roasts, $7 turkeys, $4 chickens, lol. When we have tight weeks, we rest easy knowing we can eat well. Nothing better than being dirt poor and still serving up a turkey dinner for the kids.
Also, dont waste. Use the bones for soup. Sounds like a no brainer, but i know a lot of people that just chuck chicken and turkey carcasses because they are just too lazy to bother making soup. That is literally throwing away a night's worth of food!!

Now, my favorite cheap meal: vegetarian pasta!
1 can of seasoned, diced tomatoes $1 if on sale
5-6 cloves of garlic - pennies
2 jalepenos $1.50
seasoning (oregano, thyme, dash of something spicy)
fry it all up in a frying pan, then dump in a pot of cooked pasta.
feeds the family for just a couple of dollars.
I always keep an eye out for jars of roasted red peppers. Occasionally they go on sale and i will use them in place of the tomatoes. even yummier.

Feeds 4-6 and you can add cheese or whatever else you like. Most people don't realize how truly nutritious salsa is. You could live on salsa alone. And it's delicious!

That's the only way to learn, I guess - trial and error. I wish my hubby were a more adventurous eater but he's just so basic meat and potatoes....anything creamy or too vegetabley turns him off. I wasn't really brought up to cook - for my family food interfered with our drinking, but I can steam veggies and I make a good soup. And crock pots are a gift from God!!!!

Make a frittata, you can pretty much add any veggies or meat you want, which is great if you have left over meat and or veggies.

4 eggs
1/4 cup of milk
1 cup chopped veggies such as mushrooms, spinach, kale
1/2 cup chopped onion
1 cup chopped left over ham, cooked bacon, cooked sausage, chicken..
shredded cheese

Whisk eggs, add milk , then add other ingredients. Place in greased large cast iron pan, put in oven at 350 and cook until frittata rises and no longer runny.

Enjoy!

Here's a really awesome Asian recipe I found online and made my own. You can throw whatever you have into it and it's fabooo! Most people have the basic ingredients. It's basically peanut butter, chicken stock and spices. Just add more noodles if you're not a veggie lover or don't have them on hand. Carrots and onions are especially good in this along with pea pods. I usually double the sauce. Enjoy!



Thai Peanut Noodles

3 tablespoons plus 1 teaspoon soy sauce
2 tablespoons plus 2 teaspoons lime juice (or lemon if on hand)
1 tablespoon cooking oil, plus 1 tablespoon more if needed
4 cloves garlic, minced
3/4 teaspoon ground ginger (if not on hand omit or sub 1/4 tsp allspice, nutmeg mace or cinnamon.)
1/2 cup chunky peanut butter, preferably natural
1 cup canned low-sodium chicken broth or homemade stock or powdered bouillon adjusted.)
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon dried red-pepper flakes, or to taste
3 boneless, skinless chicken breasts diced into bitesized pieces(or 1 breast with 2 c. of veggies)
3/4 pound spaghetti
3 scallions including green tops, chopped
1/3 cup chopped peanuts (optional)


In a medium, shallow glass dish or stainless-steel pan, combine the 3 tablespoons soy sauce, the 2 tablespoons lemon/lime juice, 1 tablespoon of the oil, the garlic, and the ginger. Add the chicken; turn to coat. Let marinate at least 10 minutes.
Meanwhile, in a medium, stainless-steel saucepan, combine the remaining 1 teaspoon soy sauce and 2 teaspoons lemon/lime juice, the peanut butter, broth, sugar, salt, and red-pepper flakes. Pour the marinade from the chicken into the saucepan and bring just to a simmer over moderate heat, whisking until smooth.
Cook the chicken in oil until browned and just done, 4 to 5 minutes per side. Add veggies and stir fry till slightly tender.
In a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Drain the pasta and toss with the peanut sauce, chicken, veggies and scallions. Top with the chopped peanuts, if using.

Price for main ingredients most likely to buy.
Lemon or lime $1
Chicken Breast on Sale $2 (if on sale for $2 lb)
Bag Frozen Veggies $1.50
Spaghetti $1 box
Peanut Butter $2 but will have plenty leftover probably will only use .50 worth
Scallions .50
Broth .50
Total for dish = $7 will feed 4-6

melt some butter and add garlic powder to taste.

Spread on any kind of bread, both sides, oven it until brown and you've got garlic bread.

The frozen crap at the store costs like 4 dollars for 9 slices.

I don't know the prices of food in the US so can't really help on that front but I'm sure you folks would know good prices on them.

Mashed potato or Champ (mashed potato with spring onions / scallions mixed through) are a great filling dish, what goes really well with it is chilli con carne over it, very tasty and I'd imagine fairly cheap.

Also a good stew is usually affordable to make as you can use cheap tough cuts of meat, especially if doing it in a slow cooker / crock pot. You can throw in loads of veg and if you have a chicken carcass from a previous meal then you can make a nice stock with it and throw some in the stew.

Saw a great idea on an Irish site recently (although it was probably lifted from somewhere on the web lol) whereby you let the stock cool a bit then pour in to an ice cube tray, freeze it then put each block in separate freezer bags and back in the freezer, you can then use individual blocks as you're making meals :)

Buy a small turkey when they are on sale. Make a turkey dinner, with lots of mashed potatoes and your other stuff. With your left over turkey, strip it down.

Make a turkey casserole with some of the left over turkey buy shredding it in a casserole dish. Add sauteed chopped onions, a can of mushroom soup, corn nibblets, shredded cheese and top with the left over mashed potatoes.

Also, with remaining turkey carcass and turkey make a soup or stew. Add what ever veggies you have on hand.

All of this makes a large amount of meals for more then 3 days worth of food for a family of 4.

the grocery stores here, aside from seasonal items being cheaper at certain times of the year when its good to stock up and preserve, have a lot of different 1 week sales during a month
especially on week 3-4
week 1 is ok for some bulk, and essential items, but quite a bit is crappy, aimed at children, or junk food.
so instead of going and buying most of your groceries all at one time, if you make 2 or 3 economical, healthy,shopping trips walking and carrying free of automobile pollution and expense, during the month, you can get a lot more things on sale
I just take a cart, and bring it back after
can't do that with walmart carts, the wheels lock up
should try to shop at a grocery store anyway
or if it's dangerous because you live in a Nazi empire, it's not a good idea
here there's shopping carts laying around everywhere
the stores pay guy's to drive around with a flatbeds and collect them back.

but if your like me, you almost need someone trustworthy to hang onto your food money so you don't spend it.

also the pension checks are timed in a conspiracy with the retail stores, to come out a few days earlier than disability/welfare/UI, so the pensioners can almost always catch the last half of the week 4 sale, before the next one, a day or two later, when the other checks are timed to arrive. I've been watching, and it hasn't been otherwise the entire past year.

works out the same until April this year, when my theory temporarily fucks up because the day of the week the last day of the month lands on,
then is good again until June

Make a frittata, you can pretty much add any veggies or meat you want, which is great if you have left over meat and or veggies.

4 eggs
1/4 cup of milk
1 cup chopped veggies such as mushrooms, spinach, kale
1/2 cup chopped onion
1 cup chopped left over ham, cooked bacon, cooked sausage, chicken..
shredded cheese

Whisk eggs, add milk , then add other ingredients. Place in greased large cast iron pan, put in oven at 350 and cook until frittata rises and no longer runny.

There are fancier recipes online, but one lazy day when craving the dish I improvised. I eat this once a week now. It's basically noodles, lemon and chicken. We're talking cheap meals not health food here. Adjusted for family size.

2 pkgs of butter noodles (Lipton Noodles & Sauce type)
Make according to directions.

1-2 chicken breasts diced depending on how heavy you want the meat in the dish.

Juice and rind of 1 lemon

Pepper (The cracked is best but whatever you have.)

2/3 - 1 cup shredded Parmesan cheese. Preferably the refrigerated stuff. If you don't have on hand you can mix 1/3 c. grated Parmesan w-2/3 c. mozzarella.


While noodles are cooking season chicken with salt and garlic then brown in a little oil.

When noodles are done, fluff then add chicken, cheese and lemon mixing lightly. Cover with lid for 3-5 minutes so the cheese melts. Top with cracked pepper.

Cost for main ingredients
Butter Noodles if on sale 79 ea. x2 $1.60
Lemon $1
Shredded Parmesan $3 but will only use 1/2
Chicken $2 if on sale @ $2 lb

Serves 4 for $6
