Here's a really awesome Asian recipe I found online and made my own. You can throw whatever you have into it and it's fabooo! Most people have the basic ingredients. It's basically peanut butter, chicken stock and spices. Just add more noodles if you're not a veggie lover or don't have them on hand. Carrots and onions are especially good in this along with pea pods. I usually double the sauce. Enjoy!



Thai Peanut Noodles

3 tablespoons plus 1 teaspoon soy sauce
2 tablespoons plus 2 teaspoons lime juice (or lemon if on hand)
1 tablespoon cooking oil, plus 1 tablespoon more if needed
4 cloves garlic, minced
3/4 teaspoon ground ginger (if not on hand omit or sub 1/4 tsp allspice, nutmeg mace or cinnamon.)
1/2 cup chunky peanut butter, preferably natural
1 cup canned low-sodium chicken broth or homemade stock or powdered bouillon adjusted.)
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon dried red-pepper flakes, or to taste
3 boneless, skinless chicken breasts diced into bitesized pieces(or 1 breast with 2 c. of veggies)
3/4 pound spaghetti
3 scallions including green tops, chopped
1/3 cup chopped peanuts (optional)


In a medium, shallow glass dish or stainless-steel pan, combine the 3 tablespoons soy sauce, the 2 tablespoons lemon/lime juice, 1 tablespoon of the oil, the garlic, and the ginger. Add the chicken; turn to coat. Let marinate at least 10 minutes.
Meanwhile, in a medium, stainless-steel saucepan, combine the remaining 1 teaspoon soy sauce and 2 teaspoons lemon/lime juice, the peanut butter, broth, sugar, salt, and red-pepper flakes. Pour the marinade from the chicken into the saucepan and bring just to a simmer over moderate heat, whisking until smooth.
Cook the chicken in oil until browned and just done, 4 to 5 minutes per side. Add veggies and stir fry till slightly tender.
In a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Drain the pasta and toss with the peanut sauce, chicken, veggies and scallions. Top with the chopped peanuts, if using.

Bag Frozen Veggies $1.50
Spaghetti $1 box
Peanut Butter $2 but will have plenty leftover probably will only use .50 worth
Scallions .50
Broth .50
Total for dish = $7 will feed 4-6
