We do a lot of soups, I still have kale and zucchini from the garden frozen in portions just for soups and stews.

Kale and Italian sausage soup
2lbs potatoes diced
Lg onion diced
Chicken stock about two quarts
Lb Italian sausage
Garlic...lots of garlic
Cup of milk

Brown sausage and onion and garlic..drain
Boil potatoes in stock , add sausage mixture, simmer about ten minutes
Add coarsly chopped kale. Cook another 3min
Add milk and serve with garlic bread

Meatball and spinach soup

Your meatball recipe about 1in rounds cooked
Chicken stock 2qts
Package frozen spinach thawed and drained
Lg onion diced
Orso pasta whole pkg
Garlic

Cook onion until translucent , throw everything in the pot and let simmer for 30 min
