Kale can be grown practically year round in you back yard. You could have an endless supply.

I like it chopped and sauteed in olive oil with onion, a few cloves of garlic, a can of cannelli beans(drained), salt & pepper. Top it off with a Tablespoon or two of Red Wine vinegar.

I take Bear Creek Soup Chicken Noodle add fresh chicken (not tyson), can of cream of chicken and frozen mixed veggies , cheap and my 7 yr old grandson ate 4 bowls and he picky eater

Savory Baked Apples

Price: $1.87 per serving

Pantry Checklist:
• Fat-free, lower-sodium chicken broth
• Brown rice
• Dried cranberries
• Apple cider
• Rome apples
• Butter
• Sweet Italian sausage
• Yellow onion
• Carrot
• Cinnamon
• Ground red pepper
• Garlic
• Walnuts
• Green onions
• Kosher salt
• Dried rubbed sage
• Swiss cheese

Ingredients

2/3 cup fat-free, lower-sodium chicken broth
1/3 cup uncooked brown rice
1/3 cup dried cranberries
1/3 cup apple cider
4 large Rome apples, cored
1 1/2 tablespoons butter, melted and divided
1 (4-ounce) link sweet Italian sausage, casings removed
3/4 cup finely chopped yellow onion
1/3 cup finely chopped carrot
1/4 teaspoon ground cinnamon
1/8 teaspoon ground red pepper
3 garlic cloves, minced
1/4 cup chopped walnuts, toasted
3 tablespoons minced green onions
3/4 teaspoon kosher salt
1/2 teaspoon dried rubbed sage
1/2 cup shredded Swiss cheese

Preparation

1. Preheat oven to 350°.
2. Bring broth to a boil in a saucepan. Stir in rice. Cover, reduce heat, and simmer 50 minutes. Remove from heat. Let stand 10 minutes.
3. Combine cranberries and cider in a microwave-safe bowl; microwave at HIGH 1 minute. Let stand for 10 minutes. Add mixture to rice.
4. Using a small spoon, carefully scoop out centers of apples, leaving a 1/2-inch-thick shell, and chop apple flesh. Brush the inside of apples with 1 tablespoon butter. Place apples on a baking sheet, and bake at 350° for 25 minutes or until just tender.
5. Preheat broiler to high.
6. Heat a large skillet over medium-high heat. Add sausage, and sauté 5 minutes, stirring to crumble. Remove from pan; drain. Wipe skillet, and melt remaining butter in pan. Add chopped apple, yellow onion, and next 3 ingredients (through pepper); sauté 4 minutes. Add garlic; sauté for 1 minute, stirring constantly. Add sausage, onion mixture, walnuts, and next 3 ingredients (through sage) to rice; toss. Divide rice mixture evenly among apples; top with cheese. Broil for 5 minutes or until golden.

1 lb of hamburger, $2.99
1 8ct large torillas, $1.00
1 can refried beans, .79

Cheese, lettuce, salsa, cumin , chili powder, salt ( maybe $2 worth of the rest you will use another day)

For seven dollars you can feed a family of three with two burritos each and have some left over to take to work for lunch.

Brown burger. Add cumin chili powder and salt to taste. I use a lot of cumin, a little chili powder, then salt add last.

Cook off the grease ( if a lot of grease, drain before adding seasoning).

Add refried beans. Heat and stir until it tries to bubble. Shut off.

Get a cookie sheet and make a burrito one at a time with the meat. Add cheese before you roll it. Make all 8.

Sprinkle some cheese on top of the burritos. Bake at 375 till the edges start to brown. Take out and serve with lettuce and salsa.

Ok GLP lets teach those on foodstamps how to stretch a dollar & where they dont have to eat potted meat or beefaronis or ramen noodles.

^^^these foods have near no nutritional value and contribute to obesity.

for one - every supermarket must DATE their foods. shop in the store and note the DATE OF EXPIRATION. come back that day of expiration and those meats will be reduced by half or more.

shop at bread stores, where most of the bread is either 2/1.00 or 1.00 a loaf.



ill start off with a few - this will feed a family of 6. and for 2 nights.

remember - this isnt mcnastys where you can "supersize it"....the only thing that will supersize is your waist if you dont cut down on portions.

1.5 lbs ground chicken
one onion chopped.
^^cook til browned & onions tender. drain.
add 8 slices of cheese (or 1 can of campbells cheese soup)
low flame, simmer til cheese is melted.

pkg of wraps.
finely shredded lettus

spoon the meat/cheese into the wrap, add lettus,

makes a crap load. 2 maybe 3 nights worth.

I rarely eat meat anymore, but this simple meal got me through some tough times: Dan's BBQ pork chops.

5 to 8 medium width chops
2 cups ketchup
1 cup Braggs Apple Cider vinegar
2 teaspoons nutmeg
1/2 cup brown sugar
salt and pepper to taste
water

Brown chops in olive oil or any oil for that matter until fully cooked. Mix above ingredients in large baking dish.
Add the chops and bake at 350 for an hour to two hours-longer the better-meat will fall off bone. Cook brown rice and pour sauce over it.

I use veggies to stretch everything for $$ and health.

Staples are cabbage, onions, shrooms, peppers, kale, squash, potatoes and spinach.

With these I can stretch; meat, beans, rice, pasta, eggs.

When poor I've used these to stretch; ramen, Lipton sides, and hamburger helper for complete meals.

With care veggies/fruits can last a long time in your fridge without destroying the taste.

Pork back fat lasts a long time in the fridge and is a great flavor addition for the small amount needed also.

For those of you who are experiencing hard times there are two more things I would like to share. If you smoke cigarettes buy some rolling papers. While you are out and about and happen upon a few partially smoked cigs, pick
them up and collect as many as you can. Empty the tobacco into a jar and let air dry for a day or two and then roll them up. Also, give plasma twice weekly and make a few hundred bucks.

Lot of butter in a large pot, add a head of cabbage shredded and a large sliced red onion and heat very slowly, you don’t want to boil it. You just get it very hot and cover it while stirring once in a while, cook till tender on the slow heat. I normally go about 40 minutes, when it's done turn it off and leave in the pot.

Then take a whole bag of broad egg noodles cook them up but don't over cook the noodles whatever you do, drain and cool.

Then I use caseless sweet sausage; cook it up in a separate skillet and break it in to semi small pieces, don’t drain the sausage, make sure it is thoroughly done. You can use whatever type of sausage you want.

Take the cool noodles in the colander, dump the cooked but undrained sausage over the top of it then mix while the noodles are still in the colander, stir and then dump that in with the already cooked cabbage and onion and stir again. Needs a bit of salt and pepper to taste and will last 4 or 5 days in the fridge easy. It will feed about 8 people very large portions for about 8 to 10 bucks give or take.

More than that it’s a feel good food, upset stomach or someone sick in the house? Simple to digest quick and easy to cook and a lot of energy in a little meal.


You can also use cased sausage and serve it on top of the cabbage noodles but I like the oils mixing in with the noodles, enhances the flavor and keeps the noodles from sticking together.


Base recipe here, but I add to it and change it up.

Picnic roast (pork)--goes on sale often. I cook this in my crock pot with an onion and one can of DR whatever. When its done, pick out the meat. (reserve fat, bones and some meat)
This will make pork sandwiches, carnitas, and pork fried rice.

In your reserve in the same crock pot....pop in another onion, a can of rotel (can use generic) and a bag of 15 bean mix. This is super delish. Very filling, tastes great with cornbread or as a side dish with the carnitas or pulled pork sandwiches.

I love to cook things that people usually throw away. Here is one of my favorites:

Candied orange peel
• 2 large oranges, 1/8 inch of top and bottom cut off
• 2-1/4 cups sugar, divided
• 2 cups water

these are so crazy delicious, you will not believe it!

Cut peel on each orange into 4 vertical segments. Remove each segment (including white pith) in 1 piece. Cut into 1/4-inch-wide strips. If you squeeze your own orange juice, just cut strips from the peels after extracting the juice. Cook in large pot of boiling water 15 minutes; drain, rinse, and drain again.

Bring 2 cups sugar and 2 cups water to boil in saucepan over medium heat, stirring to dissolve sugar. Add peel. Return to boil. Reduce heat; simmer until peel is very soft, about 45 min. Drain.

Transfer peels to sheet of foil. Let stand until they are dry, about 24 hours.

Note: Continue to slow boil the sugar/water mixture after removing oranges until it cooks down, and you will have a delicious orange syrup for pancakes, stir-fried dishes, etc.

And use the drained water from boiling your peels to add to your cleaning products, and homemade laundry detergent for an extra citrus cleaning boost!

I notice that a lot of the recipes call for A LOT of cooking, therefore a high gas or electric bil.

heres a good recipe that has a good marriage of flavors, and little to no cooking

combine can/s drained tuna with
avocado/s,
bacon bits,
just a touch of italian dressing,
a squeze of lemon,
maybe a splash of balsamic vinegar,
pinch of salt

can be eaten alone, with crackers, on salad, in tortillas

Oh that sounds good! Cabbage is an excellent vegetable that is relatively inexpensive and so versatile. I make a dish that is similar with bratwust browned then laid on a bed of shredded, salted cabbage and topped with sliced onions. Cover and cook till that brats and cabbage are done.

this is the best macaroni and cheese casserole meal that i have ever come across:

2 cups of macaroni
4 tbl butter 2 1/2 cups of shredded cheese
2 lrg eggs
1/2 cup of milk
paprika

btw, to this i also add a teaspoon of dry mustard (it gives a lovely bite and its also good for you)

a few dashes of tumeric, again just a healthy addition!

cook macroni (i cook it less by 2 mins from what the package says, cause it gonna cook further in the oven)

add 2 cups of grated cheese to macaroni

separately wisk eggs n milk, along with any spices of your choice

add to the already macaroni/cheese mix

sprinkle the top with 1/2 cup of grated cheese and sprinkle some paprika

bake for 30 or so minutes, or until the top browns a bit!

when i make this for the two of us, i usually bring over a plate for a neighbor, and then still have leftovers for two/three the next day ... all in all, it makes 5-6 good meals/servings in all!

and if you add a fresh green salad to each serving, it is absolutely wonderful and really fills you up with lovely nutrition!

Contribootin a fav ramen recipe for those college students out there. (yes, I know ramen is the devil)

Cheap chicken Alfredo

This is a good meal to have for lunch or something to just pass your hunger for a bit.

Cost:a little over a buck

1 Pack of chicken ramen
1/4 cup of milk (2% or whole)
Butter (for the pan)
1 Large egg (optional)
1/2 chicken breast (optional, you can interchange or combine this and the egg depending on your budget).
1/3 or so cup of shredded cheddar or monterey jack cheese


1.)Start by putting the ramen water to boil.
2.)If you are including it, use this time to fry up the egg or cook the chicken.
3.)Dice up the egg or chicken into bite sized pieces and set aside.
4.)By now the water should be boiling so cook up the ramen noodles. (Don't add the flavoring packet yet!)
5.)When the noodles are done, drain the water while leaving enough so that it's barely visible when the pan is laid flat.
6.)Add the cheese and egg/chicken.
7.)While stirring the ingredients at a low heat so as to melt and distribute the cheese, add your milk.
8.)Lastly, turn off the heat, add about 1/2 of the chicken flavor packet and stir it in. (I find the whole packet is an overload of salt and flavor I don't need)

Gravy on anything will stick to your ribs. My mother grew up in the Depression and her family included biscuits and gravy at every dinner. They never went hungry.

EASY WHITE GRAVY
4 tbsp. butter
4 tbsp. flour
Salt
Pepper
2 1/2 c. milk

Melt butter in saucepan over low heat. Blend in flour, salt and pepper; cook until smooth and bubbly. Stir in milk. Heat to boiling on medium heat, stirring constantly. Stir and boil 1 minute. Makes enough gravy for 1 can biscuits.

here's one that I cook

1 can cream of chicken

1 can cream of mushroom

2 cans treet, are spam. I prefer treet

2 cans water

pepper and onion powder

egg noodles

mix soups in pot with 2 cans of water, cut up treet and add to pot, add onion powder and pepper. in another pot cook bag of egg noodles. when egg noodles are done drain and add to soup mix. let sit about 5 min. stir and serve.


can also add onions, we used to but kids didn't want them in there. you can also change the meat to chicken are ground meat.

note: do not add salt, even in the noodles there is more than enough in soups.

we fondly call this SHIT, because a friend had some at our house and said it was good shit lol. the name stuck.

Cheap and Easy Bean Soup

1 can rotel tomatoes
1 can chicken broth
1 can vegetarian refried beans (lower fat)

Mix together and heat. Top with shredded cheese, bacon bits. red onion and/or a dollop of sour cream. Serve with tortilla chips.

This feeds at least 4 people. You can just keep adding cans depending on family size. Way faster than waiting in any drive thru line I guarantee!

Max price is $1 a serving and that's if you do all organic cans! Shop smart and you can bring that down to half that or more. Consider doing your own broth or beans if you have time and it's pennies!

It really is delicious. If your kids don't do spicy, you can use a milder version of rotel tomatoes.

how about some open face sandwiches.

on cookie sheet place 8 slices of bread

open a can of pork n beans, are 2, and layer them on the

bread.

add some onions (optional)

add a piece of cheese

and bacon on top ( I partly cook the bacon)

bake until bacon is done on top and bread is toasted on
bottom.

great post. Many gringos don't understand that a can of re-fried beans is the best base for a gravy possible. neutral proteins and fiber. The rotel/chicken broth or even water if you are poor can make something much better than carb based fillers.

We call this "Chicken Rotel"! I have no idea if it is an actual recipe, but I got it from an friends Grandmother. She used to feed it to us when we would roll in after a night full of fishing (drinking, lol).

I buy a whole hen when on sale, Kroger 42 cents a pound, $5.00 or so. Boil it, then pull all the meat off in shreds.

Make an entire block of rotel dip with two cans of rotel, about $6.00 or so.

I buy frozen vegetables, so I use two packs of green peas or English peas, usually $1.00 a pack.

Boil a medium size bag of Egg Noodles, about $2.00 - $2.50.

Two small cans of Cream of Mushroom soup heated. About 59 cents each.

Mix it all together in a large casserole dish, cover with foil and bake at 350 for about 20 minutes. Remove the foil and go an additional 5 minutes. Feeds 5 for two days.

Mama Bass used plain noodles, I just like the taste of egg noodles myself.

Averages to about $1.50 a serving.

Yum!! Leave out the chicken to make it just a side dish.

1/3 pkg frozen peppers and onions (can saute if you want)
1 lb chicken breast cooked with oil garlic and salt
1 8oz can tomato sauce
3 bouillon cubes
1 can diced green chiles (optional but one of my faves)
2 c. rice
3 c. water
2 tbsp. oil


Heat the rice in oil till it becomes white or slightly golden. This keeps it from sticking. Add all other ingredients.

I use a rice cooker, but for those that use the stove, bring contents to a boil large saucepan or enamel pot and then turn on very lowest setting to steam rice for approx 25-30 mins. DON'T LIFT THE LID. Makes about 8 cups.
