We call this "Chicken Rotel"! I have no idea if it is an actual recipe, but I got it from an friends Grandmother. She used to feed it to us when we would roll in after a night full of fishing (drinking, lol).
I buy a whole hen when on sale, Kroger 42 cents a pound, $5.00 or so. Boil it, then pull all the meat off in shreds.
Make an entire block of rotel dip with two cans of rotel, about $6.00 or so.
I buy frozen vegetables, so I use two packs of green peas or English peas, usually $1.00 a pack.
Boil a medium size bag of Egg Noodles, about $2.00 - $2.50.
Mix it all together in a large casserole dish, cover with foil and bake at 350 for about 20 minutes. Remove the foil and go an additional 5 minutes. Feeds 5 for two days.
Mama Bass used plain noodles, I just like the taste of egg noodles myself.
Averages to about $1.50 a serving.
