Fast, easy and delicious meatloaf recipe: 1-1/2 ground sirloin or any other lean meat 1/4 cup ketchup 1/2 cup tomato juice 3/4 cup bread crumbs 1/2 cup onions finely chopped 2 eggs beaten 1/2 tsp. each salt and pepper (If you wish, you may also add finely chopped green pepper. It adds great flavor) Mix all ingredients together with hands and put in baking dish. Bake at 400 F for about 1 hour. Very good with mashed potatoes and lettuce salad. Left overs can be used next day for sandwiches. Bon appetit!  :LPSEV: For Phenn! i grew up eating this recipe alot. my mother put the ketchup on top when baking though. she would use saltine crackers when she had no bread crumbs. something about mashed potatoes works with this perfectly too. this is a simple way to make meatloaf and i like it.
