This is a Slavic porridge. I quite like it and it's easy to assemble.

Pour half a cup of buckwheat into a cup of water. Mix in salt and vinegar. Allow this to sit until the buckwheat softens. Simmer the concoction on low for several minutes. After, you may wish to garnish it with spices, goat cheese, and olive oil.

This is essentially the forefather of Gatorade, which despite its description, is tasty. The Roman legions and American railroad workers drank versions of this this out of their canteens.

Pour two tablespoons of red wine vinegar into 250 millilitres of water. Honey and coriander seed make great embellishments.

Cinnamon rolls using bisquick. I made these last night and they were pretty good.

3 cups bisquick
3/4 cup milk
1 egg
3tbsp butter
Cinnamon

Preheat the oven at 350 degrees.

Beat the egg and mix together. Makes a soft dough. Roll out to a rectangle, about 10 x 8 inches. I did this direct on the cookie sheet I used to bake it. I dusted the cookie sheet with a bit of bisquick so it didn't stick.

Melt 3 tbsp butter and slather onto the dough rectangle.

Sprinkle cinnamon on top of that. I like a lot of cinnamon.:)

Roll up, use the long side to start rolling. You'll have to keep bisquick or some flour on your hands or you'll stick to it.

Roll it up tight, then pinch together where it meets. Put the pinched edges underneath, you'll have to flip this long roll.

Then about every inch or so, slice the roll almost all the way through.

Bake until nice and brown and done in the middle. 15 to 20 minutes. Check middle and make sure it's done. If not, put it back in for a few more minutes.

This was quick, easy and cheap. Nice dessert for a little bit of $.

I use mine on the kneading cycle. :) But I bake the bread in the oven as rolls. I don't care for the loaves the breadmaker makes.

Also, you can get a breadmaker for way cheaper than 300 dollars.

Its only about €1 for a batch or pan here which would do you for 2 days. We also have products you can oven cook for freshness. Im a gadget queen but theres only so many gadgets and appliances you can own and store.

Bacon Wrapped Potato Bites

ingredients

1 pound small or medium red potatoes
2 1/2 teaspoons salt, divided
1 1/2 teaspoons minced fresh rosemary
1 tablespoon olive oil
Freshly ground pepper
12 ounces to 1 pound thick-cut bacon
1 cup (8 ounces) sour cream
1-3 teaspoons hot sauce
Salt and pepper
Directions

Preheat the oven to 400°F.

Wash and dry the potatoes. Chop them into 1-inch pieces, keeping the chunks roughly the same size even if they aren't the exact same shape. Put the potatoes in a medium pot, cover with cold water, and bring to a boil. Season the water with 2 teaspoons of salt. Once the water begins to boil, cook the potatoes for 3 to 4 minutes, until you can stick a fork into them without too much resistance. You want the potatoes to be almost, but not fully, cooked through so they won't fall apart during the next steps.

Drain the potatoes and put them in a large bowl. Add the rosemary, olive oil, 1/2 teaspoon salt, and a few grinds of pepper, and toss until the potatoes are evenly coated.

Cut the strips of bacon into thirds. Wrap each potato bite in a piece of bacon, securing it with a toothpick. Put the potatoes on a baking sheet lined with parchment paper or aluminum foil spaced an inch or two apart. You may need to cook the potatoes in two batches.

Cook the potatoes for 15 minutes, then flip each piece. Cook for another 15 to 20 minutes, until the bacon is cooked through and as crisp as you like it. Mix the sour cream and hot sauce in a small bowl. Season with salt and pepper. Pile the potato bites on a plate and serve alongside the dip.

My great grandmother ate kippered herring. That was just too big for me to consider.

Anchovies are a yummy too on Caesar salads and feta/black olive pizza.

Agreed! Anchovies are yummy and I like to have one or two with a glass or red wine. I love fish, so I also like sardines and my Portuguese friends doing them on barbeque, delicious! Herrings are very popular dish in my old country and we eat them often. Here is my receipt and I call it “Polish Sushi”... LOL

HERRINGS IN OIL:

6-8 herrings fillets without bones
1 large white onion, chopped
1/3-1/2 cup oil
2-3 tsp. white vinegar
black ground pepper to taste
1-2 cornichons, chopped (optional)

- Wash fillets and soak them for 2 hours in cold water. Drain the water, rinse the fillets and soak them again for another 2 hours in fresh cold water to get rid of the salt
- Drain and cut filets in small pieces, approximately 3 cm wide and place them in shallow dish
- Put on top chopped onions and eventually cornichons
- Mix oil with vinegar and pour over fillets with onions

Marinate them at least 2-3 hours before eating and they are even better the next day. Can stay in the fridge for 5 days.

You can eat them with bread or with hot boiled potatoes. Do not heat herrings fillets! This is perfect side dish if you have quests over for vodka. LOL

You may substitute oil for sour cream of the amount of your choice, but then, do not add vinegar.

HERRINGS ROULADES:

Same ingredients as in previous receipt. At the end of each herring fillet put 1/4 cornichon sliced long side and 1 slice of onion. Roll the fillets and secure each one with 2 toothpicks. Pour oil/vinegar mixture over.

:UHNDS:


POTATO – HERRING SALAD:

4 large red or white potatoes, boiled in skin
4 eggs, boiled
2 cornichons, chopped
1/4 red onion, chopped
2-4 herring fillets soaked twice for 2 hours each time in fresh cold water and cut in small pieces
1/2 cup of mayonnaise
salt and pepper
2 spoons of sour cream (optional)

- Boil potatoes for approximately 40-50 minutes, drain and remove skin when they cool down, cut in medium pieces and put in a medium bowl
- Boil eggs and cut in small pieces, add to potatoes
- Add cornichons, onions, herrings and salt/pepper to taste
- Mix everything with mayonnaise and sour cream

meatless chili

Ingredients:

2 Tbsp. canola oil
1 large onion, diced
3-4 bell peppers, diced
4 cloves garlic
1/4 cup chili powder
1 Tbsp. ground cumin
1 tsp. ground chipotle chili powder, or a few teaspoons of puree from canned chipotles in adobo sauce
1 tsp. ground coriander
1 tsp. dried Mexican oregano
Two 14 oz. cans diced tomatoes with juice
One 14 oz. can tomato sauce
4-5 cups cooked black beans
salt, to taste
fresh cilantro
diced avocado
fresh tomato
red or green onion

Instructions:

Heat the oil in a large stock pot. Add the onion and cook until it starts to brown. Add the peppers and garlic. Cook until peppers start to soften. Lower heat as necessary so garlic doesn’t burn. Add the spices (except for oregano) and stir-fry until fragrant, about 2-3 minutes. Add the tomatoes and tomato sauce. Be sure to scrape the bottom of the pan really well and stir everything together. Add the oregano and black beans. Lower heat to a low simmer. Cover and let cook for at least 30 minutes, or longer for flavors to meld. Serve over cornbread with desired garnishes.

Here's one I just found and tried.

Monkey Bread

A great, tasty special breakfast or dessert idea is monkey bread. If you shop at ALDI, it's even cheaper than the grocery store.

1)Take 4 cans of regular-size buttermilk biscuits and cut each biscuit into quarters.

2)Make a cinnamon-sugar mixture (1/2 cup sugar, 1 tbsp cinnamon) and roll biscuit pieces in mixture.

3)Drop pieces into a greased bunt pan

4)Pour a brown sugar syrup over top (stick of margarine melted in microwave and 1 cup brown sugar stirred in), and bake for 45 minutes at 350.

Pull apart with fingers or fork and eat while still warm. Put a lean salad with this and it could be lunch or supper.

I found another one that used vanilla pudding in with the brown sugar syrup. I think I might try that next time.

I did these in muffin pans, and have also used bread pans.
They cook a bit faster in the muffin pans, but are a bit less messy.

Very delicious!

serve with special dip:

tuna, chopped onions, 1 peeled/chopped apple, s/p, garlic powder, lettus, tomato, mayo & fritos

make wraps, now cut into 4-5 slices. arrange on platter

loaf of italian bread/split in half, ham slices, provolone, butter, garlic

spread butter on bread halves, s/p and garlic. bake in oven til golden brown. remove. top with ham & provolone or mozzarella, bake til cheese melts, - slice into pieces. have some marinara to dip.

Happy Birthday! Fellow Aquarius...;)

Buy fryer chicken for .99/pound on sale. Buy three or four and freeze the rest.

Chop up a medium onion, brown in 2-3 TBSP butter. Add one or two chic buillion cubes and a good spanking of sage. Keep stirring. Deglaze with a half a cup of water, let reduce until juicy not soupy.

Meanwhile, toast 3 or four slices of bread, cube in 1/2 inch chunks. Add to your onions/sage and set aside.
(my mama also used diced celery in her stuffing)

In the meantime you have washed and cleaned your chicken. I like to soak it in salt water for at least an hour while I am peeling the vegs see below. Nana said it drew the blood out & made for a more tender bird. I will also add that salt water does not agree with some bacteria such as salmonella. Staph likes salt...but not heat.

Wrap giblets in foil. Roast on the pan with the chicken. Give the kids or yourself the cooked liver when you are finishing the gravy. Pick the meat off the neck and give to the cats with the chopped heart and gizzard.

Put the stuffing in the chicken.

Put the stuffed chicken in a 350F oven for about two hours. You really want to cook it good, until you can "shake a leg"

Take your chicken out of the pan and put on a platter. During the last half hour, your have boiled a pot of cubed peeled potatoes until tender you bought last fall for $7 a 50 pound bag. Drain.

In another pot you have scraped and sliced a half dozen carrots and cooked til tender. Drain.

Put salt and a couple tablespoons of butter and a good splash of milk and beat your potatoes. Put a tablespoon of butter and a tablespoon of brown sugar into the carrots.

Put your roasting pan on a burner and reduce the juices until they look shiny. Throw in another chicken bouillon cube and enough flour to soak up the liquid, stirring, stirring stirrin.

SLOWLY add milk (or water) stirring constantly...if you go too fast you will get lumps. Once you have it going you can add the last bit of liquid in a rush and let it simmer stirring occasionally.

You now have a roast chicken dinner for four.

With any leftover chicken, you can pick it cold, dice the meat, add some raisins and chopped apple & mayo for the best chicken salad ever!

Leftover gravy and chicken? chop the chicken, add the gravy, drop by spoonfuls into bread crumbs shapeinto patties and fry each side until brown...best chicken croquettes ever.

My nana would have offered jello for an inexpensive dessert and cheese biscuits as well...(dice up cheese of your choice and put in your biscuit dough)

Roast chicken dinner stuffing addendum!!!

I forgot to explain...

Put the HOT stuffing in the bird and put the bird right in the preheated oven. DO NOT put cold stuffing in the bird! DO NOT pre-stuff the bird and let it sit around OR refridgerate it!

After the bird is cooked, it can rest a half hour or so, but then remove the stuffing and eat it, or remove it and refridgerate it, and then THROROUGHLY reheat any leftover stuffing.

The issue with bacteria is they like warm temps, if you put the hot stuffing in and put the bird right in the oven, you give the bird a jump start to cooking.

Bacteria want about four hours of warm temps...your bird will be cooked through by then.

and if you try and cool the a stuffed bird it will take too long, so get the stuffing out while it's hot.

If you feel uncomfortable about stuffing the bird, the stuffing is great right out of the pan.

If you are sick of the same old sloppy joes, bake some potatoes, then put slop on top. You can add cheese, sour cream, chives, etc. Add a side salad or green beans and you have a completely filling meal.

This way it is not as sloppy and you don't have to eat 2 sandwiches to get filled!

BOLOGNA or MORTADELLA SCHNITZELS:

1 Ib bologna or mortadella
1 egg
bread crumbs
salt and pepper
oil for frying

- Mix egg with little bit of salt and pepper
- Slice Bologna or Mortadella in 1-2 cm cutlets, remove skin
- Coat in egg and bread crumbs
- Fry on both sides till golden in colour

You may cut bologna in thicker slices and with knife make in the middle kind of pockets. Fill them with slices of yellow cheese and repeat the process from the above.

SMOKE MACKEREL SPREAD:

1 smoke mackerel, bones and skin removed
1/2 cup feta cheese
chopped green onions or chives
1-2 Tbsp. mayonnaise, enough only to mix all ingredients
salt and pepper to taste
olives or slices of cucumber for garnish, optional

- Mash mackerel and feta cheese with fork
- Add all other ingredients and mix together

4 Tbsp. yellow cheese, shredded
1-2 Tbsp. mayonnaise
salt and pepper to taste

- Repeat preparation as above

2-3 hard boiled eggs, finely chopped and/or mashed
1/8 of small red onion, finely chopped
1-2 Tbsp. mayonnaise
salt and pepper to taste
1 cornichon, finely chopped or shredded and drained from juice before added to the mackerel mixture (or) slices of cornichon for garnish, optional

- Repeat preparation as above

You may just mash mackerel with mayo adding salt/pepper to taste and put slices of eggs on top of your bread with the spread and have cornichon on the side, optional, of course :))

This smoke mackerel spread is much tastier than tuna salad. And is perfect for sammiches!

Really good:

Hash brown and Ham Casserole

4 Cups Hash browns (bake potatoes then shred, or use frozen hash browns, just make sure they are thawed)
2 Cups Cooked Ham (diced)
1 Med. White Onion (diced)
1 (4oz.) Diced Green Chilies
3 TBSP Flour
1 C. Half/Half
4 Eggs
1 1/2 Cup Shredded Sharp Cheddar Cheese
Salt/Pepper Butter

Preheat oven to 350

Start by melting 4 TBSP butter, pour over the hash browns, stir until well coated. Add in salt/pepper to taste. Now FRY in a skillet until brown and crispy. Place into a lightly sprayed 9×9 inch pan. Saute onion, chilies and ham in the skillet until onions are fork tender. Now place this mixture over the hash browns in the pan. In a small bowl beat together the eggs, flour and half/half and cheese. Pour this over all the other ingredients in the pan. Bake for 40 minutes, or until golden brown around edges. Let stand for 10 minutes before serving.

This is too easy to be so good:

Raisin Pudding

1 tsp. Baking Soda
1 tsp. Vanilla
1 C. Milk
1 C. Raisins
3 TBSP. Butter~ melted
1 C. Sugar
2 C. All Purpose Flour
1/2 tsp. Salt
2 tsp. Cinnamon

4 C. Water
2 C. Brown Sugar (packed)
1/4 C. Butter

Combine the first (9) ingredients together. Pour into a lightly greased slow cooker.

Bring the water, brown sugar and butter to a boil. Then pour over the batter in your slow cooker.

Cover with lid, set on low for 4 hours -- remove lid the last 30 minutes of baking.

This magically makes a cake with a raisin pudding underneath. Serve it warm with a scoop of vanilla ice cream.

It maybe costs $300 but the machine pays for itself after 6 months.

Hot Water Cornbread

Ingredients:
1 cup cornmeal
1 teaspoon salt
1 teaspoon white sugar

1 tablespoon shortening
3/4 cup boiling water
Directions:
1. In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
2. Pour oil or bacon fat to a depth of 1/2 inch in a large skillet and heat to 375 degrees F (190 degrees C).
3. Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide. Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes. Drain on paper towels. Serve at once with maple syrup or honey.
