Roast chicken dinner stuffing addendum!!!

I forgot to explain...

Put the HOT stuffing in the bird and put the bird right in the preheated oven. DO NOT put cold stuffing in the bird! DO NOT pre-stuff the bird and let it sit around OR refridgerate it!

After the bird is cooked, it can rest a half hour or so, but then remove the stuffing and eat it, or remove it and refridgerate it, and then THROROUGHLY reheat any leftover stuffing.

The issue with bacteria is they like warm temps, if you put the hot stuffing in and put the bird right in the oven, you give the bird a jump start to cooking.

Bacteria want about four hours of warm temps...your bird will be cooked through by then.

and if you try and cool the a stuffed bird it will take too long, so get the stuffing out while it's hot.

If you feel uncomfortable about stuffing the bird, the stuffing is great right out of the pan.
