SPAGHETTI AGLIO E OLIO E PEPERONCINO:

14 oz (400 g) spaghetti
1/2 cup olive oil
4 cloves garlic, crashed
2 small red chili peppers, seeds removed and finely chopped
3 anchovy fillets
green parsley, chopped
black pepper to taste


- Cook pasta in salted water for 6 minutes and drain reserving 1/3 cup of the cooking water.
- Brown garlic and anchovies in oil for 2 minutes, stirring the anchovies until they are almost completely melted.
- Add chili peppers, stir and then add pasta all at once with the reserved water, a little at time.
- Saute, stirring constantly until all the water is absorbed by pasta. Make sure that pasta is cooked al dente.
- Sprinkle with freshly ground pepper and parsley.
- Serves 4.

Easter is around the corner, so here are some eggs recipes.

EGG SPREAD:

6 eggs, hard boiled
3 Tbsp. mayonnaise
1 tsp. mustard
3 Tbsp. green onions, chopped
salt and pepper to taste

Crash eggs with fork, add all other ingredients and mix together.

This egg spread Sammich with anchovies is of course, especially for “Pool”.

10 hard boiled eggs, chopped
2 raw eggs
1 bunch of green onions, chopped
3 Tbsp. bread crumbs
salt and pepper to taste
dash of Vegeta (optional)
oil for frying
bread crumbs for coating

In a bowl beat raw eggs with a fork, add chopped boiled eggs, green onions, bread crumbs and spices. Mix everything together and form coutlets with wet hands. Coat in bread crumbs and fry in oil on a low heat till golden in colour.

Ok, I know this is not a recession meal but I would like to share it with others. I’ll be doing it for my Easter Dinner. I have this recipe from an old magazine and so far, this is my favorite pot roast. Perfect when you have quests over for dinner. No need” to fight” with the pans and pots in the kitchen because it is made in one baking dish and then served on one big serving plate. You can just enjoy your time seating behind the table with everybody else.


BEEF POT ROAST:

3,5 Ib (1,6 kg) chuck roast or rump roast
1 tsp. pepper
3 Tbsp. olive oil

2,5 cups onions, chopped
2,5 cups carrots, cut in chunks
8 medium potatoes, cut in half
1 cup celery, diced
1 bunch green parsley, chopped
2 cups canned plum tomatoes with juice
2 cloves garlic, minced
1 tsp. salt
2,5 cups dry red wine

- Rub the roast with pepper. In a large heavy pot heat the oil and sear the roast on both sides until well browned. Transfer the roast to a large baking pan with a lid.
- Pour in the wine and add salt, garlic and parsley. Stir in onions, carrots, tomatoes and celery. The liquid should not cover the meat completely.
- Cover and bake in preheated oven at 425 F for a few minutes till it starts to simmer and then reduce the heat to 350-375 F and bake for another 3 to 3,5 hours.
- After 1,5-2 hours of baking, turn over the roast and add potatoes with little bit of water.
- Makes about 8 servings.

* If for some reason you don’t want to use red wine I am just guessing that it may be replaced with 2,5 cups of water mixed with 1,5-2 Tbsp. red wine vinegar....

EASTER MEATLOAF WITH EGGS:

1,5 pounds ground pork or beef or half of each
1 medium white onion, finely chopped
2 eggs, beaten
3/4 cup bread crumbs
1 Tbsp. mustard
1 tsp. Worcestershire sauce
salt and pepper to taste

5 hard boiled eggs, peeled and ends sliced off

- Mix all ingredients together
- Place half of the meat in a greased baking loaf pan and put eggs long side on top the meat in the pan, and then cover them tightly with the remaining half of the meat
- Bake at 390 F for 1 hour

Or make it "personalize”. In this case grease each one of them with oil and bake at 330 F for approximately 35 minutes.

ORANGE GLAZED CARROTS:

1 Ib. carrots, peeled and sliced
1 large Navel orange
1 Tbsp. margarine
1 Tbsp. light brown sugar
salt and pepper to taste

- Finely grate orange peel to get 1 teaspoon grated peel, set aside. Cut off remaining peel with white membrane from orange. Slice orange and cut into bite size pieces.
- Cook carrots until tender and then drain the water.
- Add margarine and sugar to carrots. Heat just until sugar dissolves.
- Stir carrots in orange pieces and grated peel, add salt and pepper to taste.

* You can do the same way baby carrots. Nice to serve with Holyday roast beef or chicken and those "Perfect Irish Potatoes", a recipe posted by Vala. Very good!

I am not crazy about pies and I am not good at baking them but I like a lot the one my Canadian friend is doing and I asked her for the recipe. She serves it with ice cream or sweetened plain yogurt but I like my piece sprinkled with cinnamon. This pie is really tasty and I am sure you will like your piece as well.

THE ULTIMATE “TARTE TATIN”:

PASTRY
1 cup all purpose flour
1/2 tsp. salt
1 tsp. granulated sugar
1/2 cup cold unsalted butter, cut in pieces
1/2 cup ice cold water

FILLING
3 Ibs. Royal Gala apples (about 7 medium), peeled, cored and quartered
juice of 1/2 lemon
1/2 cup unsalted butter, softened
1 cup granulated sugar

FOR PASTRY
- Add flour, salt, sugar and butter to food processor. Process, pulsing about 6 times, until mixture resembles coarse crumbs. Transfer to bowl. Add water and stir with fork until combined.
- Shape dough into ball with hands. Cover in plastic wrap and chill for 1 hour or until needed.
- About one hour before baking, roll dough into circle about 11 inches in diameter and transfer to round baking pan or removable tart pan bottom. Crimp edges over with fork. Chill.


FOR FILLING

- In large bowl toss apples with lemon juice.
- Smear butter evenly in heavy 10-inch non stick skillet at least 2 inches deep. Sprinkle evenly with sugar.
- Arrange apple quarters on their sides on sugar in concentric circles, wedging together tightly. Place remaining quarters on top. Cook uncovered over medium-low heat about 45 minutes or until syrup thickens and turns rich, toffee brown. Mixture should bubble steadily but not vigorously. (If it threatens to bubble over, remove some with bulb turkey baster). Remove from heat and let stand about 10 minutes.

BAKING
- Carefully slide chilled dough on top of apples. Place skillet on cookie sheet to catch drips.
- Bake about 30 minutes or until pastry is golden brown. Let stand 10 minutes.
- Place large plate (preferable with lip around edges) over skillet and invert.

Enjoy it!

Spaghetti noodles
cooked chicken- whole, breasts, thighs, whatever you have
Veggies - whatever you have on hand
Lowrys season salt
Kicken Chicken Seasoning
pepper
olive oil
butter

Lightly saute veggies in olive oil( I love onions, zuc, yellow squash, mushrooms and bell peppers

add chicken

season with Lowrys , kicken and pepper to taste. I like it a little spicy.

add more olive oil and butter to your liking.

Add as little or as much meat and/or veggies that you like. Great for leftovers. It is yummie the second day.

My family loves it!!

Ingredients

1 tablespoon olive oil
2 1/2 pounds onion, sliced
2 tablespoons chopped fresh thyme
3/4 teaspoon salt

1/4 cup (1 ounce) Swiss cheese
1 large egg, lightly beaten



1. Preheat oven to 425°.

2. Heat oil in a skillet over medium-high heat. Add onion, thyme, salt, and pepper; cook 20 minutes, stirring occasionally.

3. Roll dough out on a parchment paper-lined baking sheet. cheese in center, leaving a 1 1/2-inch border; top with onion. Sprinkle with Swiss cheese. Fold piecrust border up and over onion mixture, pleating as you go, leaving a 6-inch-wide opening. Combine egg and 2 tablespoons water; brush over dough. Bake at 425° for 25 minutes or until golden. Cool for 10 minutes.

Beef Chebureki

Ingredients:
2 1⁄2 cups flour
1⁄2 cup water
4 tablespoons olive oil
1 teaspoon vodka (optional)
1⁄2 teaspoon sugar (white)
1⁄2 pound ground beef
1⁄2 onion (medium, finely chopped)
6 tablespoons milk
1 teaspoon parsley flakes (or finely chopped fresh parsley)
vegetable oil (for deep frying)
salt and pepper (to taste)
Directions:
1. In a large bowl, sift together sugar, salt (about 1/3 teaspoon) and flour. Add olive oil and vodka. Add water to the flour mixture (a small amount at a time) mixing it and kneading dough until it's even, soft and doesn't stick to your hands. Add a little more flour if the dough is sticky, or water if it's stiff. Place the dough aside and prepare the filling.
2. In a separate bowl, mix together ground beef, finely chopped onion and parsley. Season the mixture with salt and pepper and stir in milk.
3. On a lightly floured surface, roll the dough until it is about 1/10-1/8 inch thick. Cut circles using a small tea plate. Gather the rest of the dough into a ball and roll again. Repeat until you used all the dough.
4. Place about 2 tablespoons of the filling on one side of the circle, leaving 1/2 inch space at the edges.
5. Fold the other half of the circle over and pinch the edges firmly together using your fingers.
6. Make sure there is no air inside chebureki and the edges are closed tightly.
7. In a large skillet, heat the oil for deep frying (it should cover about 1/2 of a cheburek), reduce heat to medium and place 3 or 4 chebureki into oil (depending on the size of your skillet). Fry chebureki on both sides until nicely and evenly brown (about 5 minutes per each side).
8. Drain on paper towels, let rest for a few minutes. Serve while still hot.
Makes 7 servings.

HOTDOG STEW:

1/2 kg hotdogs, sliced
1/2 kg mushrooms, sliced
2 large white onions, sliced
1 small jar marinated red peppers, drained and sliced (or) 1 large fresh green pepper, sliced
2 Tbsp. tomato paste
salt, pepper, red paprika and marjoram to taste
1/2 cup oil or margarine for frying (or) half and half of each

- Place hotdogs in a medium pot.
- In a frying pan, fry mushroom with oil or margarine and add to the pot.
- In the same oil/margarine fry onions and add to the pot together with marinated or fresh peppers and spices.
- Add some water to the pot just enough to cover the ingredients and cook till everything is tender for approximately 25-30 minutes.
- Add little bit more of water during cooking when it evaporates.
- At the end add tomato paste and simmer for another 2-3 minutes.

I make something like a poor man's supper.

1 pk of hotdogs, sliced

1 green pepper diced
1 can of tomato soup
3 large potatoes peeled and diced
water
salt and pepper to taste

Cook onions and green peppers until soft and add hotdogs and potatoes and enough water to cover about 2 1/2 cups.

Cook hotdogs and potatoes in water until potatoes are just getting soft.

Add 1 can of tomato soup to the mixture and add salt and pepper to your liking cook for about 10 mins until potatoes are done. Serve with biscuits or loaf bread.

Simple and tasty!

EXPRESS SOUP:

1 large can cream of mushrooms soup
2 medium potatoes, cut in pieces
1 small carrot, shredded
1 cup pasta
salt & pepper to taste

- In a medium pot with approximately 6 cups of water boil carrots for 5 minutes.
- Add potatoes and boil for another 5 minutes. Add pasta and bring to a boil.
- In a small bowl mix cream of mushrooms soup with some water and add to the pot.
- Boil everything together till the pasta is a la dente.

* You may use in this soup just potatoes or just pasta. I like to add both for "richer" taste. You may also use half/half chicken broth and water or add to the water 1/2 of chicken cube. After turning the heat off you may add 2-3 Tbsp. of sour cream or 1 tsp. of lemon juice or both. Always mix sour cream in separate dish with few spoons of soup before adding to the pot. Serve sprinkled with chopped parsley.

BAKED HOTDOGS WITH CHEESE & BACON:

hotdogs, sliced long side but not cut in half
yellow cheese, sliced in long strips little bit shorter than hotdogs
slices of smoke bacon, the thinner the better

- Insert cheese in each hotdog and wrap around with bacon.
- Bake at 350 F in preheated oven for 10-15 minutes in a baking dish covered with aluminum foil.

- To the beans add 2 eggs, salt, pepper and mix together. If the dough is too loose add some bread crumbs.
- Form chops, coat them in beaten egg, bread crumbs and fry till golden in colour.

*You may add some pressed garlic or little bit of chili or curry to spice the flavor. Serve with sauces and salads.

Ingredients:

1/2 head of white cabbage, chopped
4 mushrooms, chopped
1 white onion, chopped
1/2 bread roll
1 egg, beaten
2 Tbsp. green parsley, chopped

1 chicken cube (optional)

Preparation:

- Cook the cabbage for 30 minutes with 1 chicken cube. Drain and cool the cabbage and then squeeze out remaining water.
- Fry onions, add mushrooms and stir-fry until the sauce has evaporated.
- Soak bread roll in water and when it’s soft remove and squeeze very well excess water.
- To the cabbage add onions with mushrooms, bread roll, egg, parsley, salt and pepper. Mix everything together.
- Form patties, coat in bread crumbs and fry in hot oil.

BEEF POT ROAST:

3,5 Ib (1,6 kg) chuck roast or rump roast
1 tsp. pepper
3 Tbsp. olive oil

2,5 cups onions, chopped
2,5 cups carrots, cut in chunks
8 medium potatoes, cut in half
1 cup celery, diced
1 bunch green parsley, chopped
2 cups canned plum tomatoes with juice
2 cloves garlic, minced
1 tsp. salt
2,5 cups dry red wine

- Rub the roast with pepper. In a large heavy pot heat the oil and sear the roast on both sides until well browned. Transfer the roast to a large baking pan with a lid.
- Pour in the wine and add salt, garlic and parsley. Stir in onions, carrots, tomatoes and celery. The liquid should not cover the meat completely.
- Cover and bake in preheated oven at 425 F for a few minutes till it starts to simmer and then reduce the heat to 350-375 F and bake for another 3 to 3,5 hours.
- After 1,5-2 hours of baking, turn over the roast and add potatoes with little bit of water.
- Makes about 8 servings.

* If for some reason you don’t want to use red wine I am just guessing that it may be replaced with 2,5 cups of water mixed with 1,5-2 Tbsp. red wine vinegar....

I don't have a recipe to add. I made this the other night off the top of my head. Slice and sautee zucchini, onions and green pepper, then add spaghetti sauce (I used Paul Newman brand that I had) and self-grated parma. cheese. Had garlic toast with it.

It's just what I had on hand and didn't feel like doing anything special really. I'm growing less fond of meat lately, but for some reason have had a great desire for bacon - the good kind.

I make something like a poor man's supper.

1 pk of hotdogs, sliced
1 medium onion, diced
1 green pepper diced
1 can of tomato soup
3 large potatoes peeled and diced
water
salt and pepper to taste

Cook onions and green peppers until soft and add hotdogs and potatoes and enough water to cover about 2 1/2 cups.

Cook hotdogs and potatoes in water until potatoes are just getting soft.

Add 1 can of tomato soup to the mixture and add salt and pepper to your liking cook for about 10 mins until potatoes are done. Serve with biscuits or loaf bread.

hotdogs are incredibly POOR food…. nutritionally plus the additives. Something else please…. tempeh would work for vegetarians.

1 glass of cold water
4 Tbsp. white vinegar
1/3 tsp. sugar
1 tsp. baking soda

To the glass with water add vinegar and sugar. Then add baking soda mixing everything together quickly and drinking it even quicker all at once when it starts to bubble.

Alkalize yourself. It works!
