It's a change of the bicarbonate ions and dissolved carbon dioxide in the water when boiled, which changes the pH of the water.

I know my home testing kit is probably not the greatest but I have kits for my salt water tanks.

Out of the tap: 8.4
Boiled: 7.2

I think the only thing that can tell a difference between 8.4 and 7.2 would be my corals and a PH tester in all honesty.
