I inherited my Grandma's knives.
she had them for at least 40 years.
I've had them for 16, best dang knives I ever had.
Donated all my previous ones to the thriftstore, feel sorry for who gets them.
Buy high quality - last forever.

Take your knives to a good sharpening service and have them sharpened. It costs bout 1.50 per knife.

I've collected all kinds of different knife sharpening crap over the years. Lately i've been buying a few of the Shapton glass stones in different grit sizes. They seem pretty good so far.

Best survival knife for the money by far. Comes with firesteel and a great sheath. You can also make it into a spear. SK5 steel. $28 bucks.

I cook a lot. Big family, most things from scratch, every single day.

Cooks Illustrated said this was the best low-cost knife and I love it. I have two and when my expensive Wusthof eventually broke I did not replace it. They keep an edge and sharpen well. There are many very nice knives out there and I'm sure you could do better, but its the finest knife you'll be able to find for $30 (and probably well up to $100, IMO). I'm hard on my tools so at this point in my life I prefer to buy mid-level stuff instead of the super expensive.

You can get some great deals on fleabay
on Mora knives from Sweden that can do a decent
job of double duty.

Stick with the carbon steel for pure
outdoor/survival use.

What kind of knives?

For pocket knives I have cheaper ones and higher quality ones.

I mostly use the cheaper ones for work, it really sucks losing a 100.00 knife.

Kitchen stuff - quality is always better, sucks trying to cut shit with a crappy knife that loses it's edge after a few passes.

I had my kitchen set for 18 years, I come home one day and the wife threw them away as a surprise and replaced them with a crap set from Kohl’s. It defiantly was a surprise and I was inconsolable. She did not understand what a true quality knife is. I tried for one night with the new set, piece of junk straight out of the box. I think it was a “bobby flay” set, either way to me they were trash.


Ended up getting a discontinued set of Wusthof for under $200 bucks I think from Macy’s, the set listed for about a grand at the time.

MORE than worth it, there is no comparison.

Here is a link, but find them in person and you can most likely get them for a more realistic price.

All in all, the set I got cost not much more than the junk set we returned to Khol’s, but the value was 10 fold.
