About to eat fillet mignon wrapped in bacon .. Mushrooms ..Salad .. Baked potatoes .. And pickled beats

How do you pickle beats? Which beats do you pickle? I know what pickled beets are but never had pickled beats. I am being mean, and joking, I do the am stuff. The thoughts of a pickled beat is slightly interesting, the beat is pickling.

Not really making fun, just hit me as funny the mistakes we all make.:)

But i would skip the beets, add a good hard bread and the mushrooms have to be sauteed in a burgundy.

And this is a weekend or vacation dinner for me.

How much did the government dole pay for that?

that's what they do with the cheap ones. some wrapped in bacon are called mock tenderloins too.

some sweet onions...fresh thinly sliced garlic along with the shrooms and just before serving them...a nice knife slice of real unsalted butter too. a little sherry will suffice if no burgundy is around.


on the tenderloins i season with onion and garlic powder...course sea salt and large cracked pepper.

Yum to all but the beets.

I'm eating a gigantic Cobb salad. It has bacon, chicken breast, tomato, green onions. butter lettuce, spring salad mix, iceburg lettuce, avocado, sliced egg, blue cheese crumbles and blue cheese dressing.

Yummy!

(I also had roasted beets and onions)

Could I exchange the beets for okra? Fried or pickled is fine.

mmmmm...i always watch for crumbles or slabs of blue cheese on sale. i even make a homemade blue cheese vinaigrette. grape seed oil or peanut oil or a light olive oil along with a seasoned rice vinegar or balsamic or even just plane ole apple vinegar. you can make the crumbles whatever size you want and then season according to your taste. it keeps for quite a while in the fridge too. a nice goat cheese crumble is great too.

Hope it was as good as it sounds.

for me...the beats were definitely an acquired taste. i learned to eat them in julienne type slices and now i can eat them any way you slice em. these as well as all the pickled veggies are a great probiotic without havin to buy overpriced manufactured pills.


pickled liver...not so much.
