Tonight I had a Chuck Roast that I Sous Vide for 48 hours in my slower cooker, then gave it a reverse sear with my Grill and a Butane Cooking torch. It was a med rare roast that cooked for two days and it was so tender that it tasted like Rib Roast. I had it with Steamed and Butter Broccoli and some Scalloped Potatoes I made with herbs from our herb garden and some parm cheese. Potatoes are great but you forgot the Beef and Veg. I also enjoyed dinner with a few glasses of Pinot Noir. |

Since I am not cooking for my family, I'll enjoy this with 2 15mg oxycodones. |

How do you keep the potatoes from rotting before you eat them? That's always my problem. Texas, no basement. A big bag always rots at my place. Does anyone keep them in the fridge? I've never tried that way. I love potatoes and onions with garlic! Good the second day as a sandwich, with ketchup. And on a flour tortilla w/cheese. And can't forget potato pancakes! I just don't like it when they don't stay fresh. Don't know what I am doing wrong.
