The chips are perfectly fine to eat, but their lawyers tell them it makes them liable if someone gets sick from the chips, chokes, dies, etc. My employer, a very large accounting firm, used to send uneaten catered food to homeless shelters, but stopped around 2008 for the same reason, legal liability.
