I remember some Italian restaurants with Italians for the front of the house but the entire kitchen staff was mexican and asians.....its funny seeing asians tossing the pizza dough....

The former servers (the asians) probably stepped up to their own businesses and left openings for college grads with English lit. and womans studies degrees.

The less mean version of this is that they opened another one in a neighboring town and took the seasoned employees to ramp up. Serial restauranteurs do this all the time.
