Usually make mine on the Big Green Egg using indirect heat, a goodly amount of hickory chunks, and the heat a 200F to start and finish off at about 300F with the internal temp at 155 to 160F. The meatloaf burps, they linger for a good 24 hours lol. Chicken livers..no way! I was a Meatloaf avoider for years, until I realized Onion Soup mix was responible for those burps (from both ends); my body reacts badly to dyhydrated onion flakes (besides chemicals). -- TRUST THE PLAN -- .......WWG1WGA...... ____________________________ still in awe of many things |

Combine 1 egg 3/4 c milk 1 c shred cheddar 1/2 c quick oats 1 tsp salt Let set 5 min Sauté onion, tomato, green bell pepper very small chopped Mix all together with 1lb beef. Cover with sauce, bake 350 45min Sauce 2/3 c ketchup 1/4 c packed brown sugar 1 1/2 tsp yellow mustard Mix together, pour over loaf before cooking I can see that this is probably the best of the best. I knew a guy that would simmer little smokies in grape jelly and bbQ sauce. It was good, and I had meat balls in grape jelly sauce too. Thanks for the reminder, I will have to try it in meat loaf. |

I smoke meatloaf and it is great. Don't use a pan, put it right on the grill. |
