We did 30lbs. of jalapeno and American cheese, 30 lbs. plain, 30 lbs. of cheese only, and 17 lbs. of teriyaki jerky, and 14 lbs. of sriachi/brown sugar jerky. We tried a little of all of it as it came off the smoker, and now for some reason, I have the irresistible urge to go scratch my head on a tree. American is very predictable in the smoker as to how much heat you can add without making a big mess with melted cheese, and the other ingredients not fully cooked.
