I really love eggs and spinach, spinach has omega 3 in it. I used to make this with rice. I use half a bag of frozen spinach with a whole chopped onion in butter on the stove top. When it's heated up I crack some eggs on top, put the lid on and turn the stove off and let those cook in the steam. I season with salt and pepper, it's good with feta cheese on the side. feta cheese is good with everything btw.
