Walrus gets more exercise than cows in fenced areas and limited movement. Big veins essential.. more like big arteries. Never ate it. I have eaten Mountain Sheep which is tough too and must be simmered... it tasted a lot like lamb but milder. I decided one day to eat a few larva from the grain bugs.. it was actually sweet tasting.. but I don't collect and eat them... I put them down for the cat. |

Alligator,crawfish, shrimp, snails, raccoon, squirrel, duck, nutria, rabbit, deer, quail, wild turkey, etc. If it flies, swims, or walks there is probably a recipe for it in La. I was also becoming more concerned on how it is RAISED as I learned more. I grew up in a small town where cows roamed in the fields etc... Pigs had space too as well as chickens.. so I was not very aware of FACTORY FARMING. But I became aware.. I stopped eating flesh in early 2000. And I got better as to my health not ingesting all the additives. I have on occasion.. eaten HALAL meat which is raised in a HOLY WAY.. but I find meat hard to digest now anyway... We are an overpopulated world consuming too much flesh.. and its biting this planet and her peoples big time. I eat eggs... because I need the cholesterol in them to make my body steroids... having suffered total pituitary failure years ago. In fact since most of mankind but not all do NEED cholesterol for that purpose.. is why CHICKENS WERE GIVEN TO THIS WORLD in the first place.. but they are raised terribly and I do the best I can.. I will not buy eggs from caged chickens. But I have to buy some of the time cage free eggs.. in which chickens still live a bit crowded indoors. That will change. It is gradually changing. I had read that Mother Pigs were kept in stalls that prevented them being able to lie down while nursing.. they have to stand for weeks on end. I got proof of that a number of years ago when a tornado took the roof off a barn. which was full of pigs with METAL cage pushing on their very flesh so they could not lie down. Now the reason also for Pigs being "unclean" as food from the bible is they were crossed with human DNA which is why they are smart and which is also why their hide is THIN and soft compared to other animals. PIG SKIN is loved for its "Leather" which is really not fully leather. Consider that when you dine on PIG. |

Kaygogi (dog)...Since the 1988 Olympics, most restaurants that served Kagogi had been either shut down or moved off to streets not likely to be visited by westerners. But I wanted to try it and had my hosts take me to a place not far from Itaewon, the area where the US base is. Entering the restaurant, the first thing you notice is the smell of wet dog.... Which is a change from the smell of garlic and sewer gases everywhere in Seoul, part of the pervasive garlic atmosphere. During the meal, one of the host party picked out a piece of meat for me and passed it. After I ate it, he helpfully offered, "That is dog penn-iss, very good for you. Still just meat.. Every country has some form of barbequed " dead animal on a stick" as a street food. Always tasty and edible no matter where I've been. While I was with a child, I couldn’t eat any meat at all. Then I just stopped eating it. But my family do eat all types of meats. Maybe it’s because of my OCD that I have to use gloves while preparing all the meals...it’s so sad to have bloody animal’s parts on my hands...it’s so cruel for me... I’m weird! I would like not to talk about those intensive animal farming. Humans have shown that we’re destroying our own planet. Blessings to you my dear! |

The cook even wrote a book about harvesting road kill, one thing is taking the rectal temperature of the animal to determine its freshness. These have to be soaked overnight in a tub to be edible, according to my Mother's late 1930s Boston Cooking School cookbook, which actually outlined everything you needed to know about cooking a Possum. Don't recall that brining is an issue, but read up for yourself. Oily animals for sure. But think duck, goose or any other animal so oily it never really gets wet.
