You just decide that you're going to actively stop the Vampires from conquering Humanity. Anyone can be a Hunter.
All it takes is helping, actively, to stop the Vampires from conquering Humanity. In any capacity. There will be Hunter groups, and they might have their own criteria for joining their particular group, but that's the basics of it.
There will be Vampire and Werewolf allies, too. You will see Vampires and Werewolves standing against the Undead which are trying to conquer Humanity.You can tell which ones are good because they will be helping Hunters. They will be helping Humanity.
