Chefs and Cooks of GLP: Your thoughts on stainless steel cookware, please?
Years ago, I bought my wife a complete set of Calphalon non-stick cookware, but for this Christmas I’m thinking of replacing it with All Clad stainless steel cookware.

I’ve used stainless before and hated it, but I’ve read rave reviews on quality stainless, and I understand there are some tricks to using it so food doesn’t stick.

My experience with stainless in the past may have been with poor quality material, so I’m thinking of going with All Clad stainless steel. We already own a few All Clad items in the kitchen and we’re pleased with the quality, but I’m willing to consider other brands.

Right now I’m considering the All Clad D5 series:

Stainless or cast iron for me, I don't want to eat PTFE

Stainless is pretty easy to clean you can soak or burn dried on food and then use a caustic cleaner if really nessasary.

All Clad is good, I would still have a few non stick fry pans for your collection too

I have Ruffoni Opus Prima now, have had All Clad and Calphalon

I have a steel pan. I do not use it because it sticks, it sticks because I do not use it...

Steel is fine if you carbonise it and just gently rinse it out. If you scrub it every time, meat will stick like glue to it.

Well, personally I don't use a set. I do have some All-Clad, and I also have tri-clad Cuisinart. Really my cookware is a mix and match of several brands of excellent quality stainless, and I'm quite happy with it that way.
That said, I also have several pieces of cast iron, and several pieces of ecolution non-stick. I used the ecolution non-stick for things like omelets and fried scrambled eggs. I also use it for a quick Burger.
As far as non-stick, I think it's just a matter of using the right pan for the job. I don't want to be using non-stick at high temperatures 4 things I don't need it for. I have the large Cusinart triclad chicken fryer and it is definitely a favorite pan. Really none of the stainless is a cleaning problem.
I also have a nice enamel coated cast iron Dutch oven, and I think everyone needs one of those. Most of my bakeware is professional made in USA USA Pan and I love it. Everyone needs at least a couple of good strong sheet pans with wire racks.
Then I have a deep fryer. My triclad is my pots. I use a smaller one for cooking rice.
One thing to look for is the handles. I can't stand a hollow handle. I want a good hole so I can hang my pans up on a overhead rack. I'm just a big believer in right tool for the job, and that includes right cookware for the job. So that's why I don't have a set. It still looks great because all of the stainless good quality cookware goes together aesthetically anyway.

I have the d5 15 pc set. Very good, cooks a little hotter.

I absolutely hate frying bacon in their pans.

I also a a couple top of the line non stick pans to go along with them.

I inherited my mom’s Revere Ware, from the 60’s I believe. They heat quickly and are good for everyday cooking. They are also light weight which makes them easy to move around

Downside, it’s nearly impossible to get a nonstick surface and really difficult to keep an even temp at high heat. Scorching is easy if the flame touches the sides.

My favorite go to pan, an iron skillet. My son is an actual chef and when he is over the cast iron is what he uses.
His cookware is Staub, and a few tin lined copper pans . If I could, I would have an entire set of Staub.

Last thought, if you have an electric range, especially with a glass surface stainless maybe you best choice. Cast iron and Staub is for gas.

I would absolutely love good quality cookware for Christmas, much more than diamonds. It holds its value just as well and is often more expensive, and I just love to cook, so it's something I would use more often then I would wear a diamond. You just have to know the woman. Women who really like to cook, can absolutely be obsessed with good quality kitchenware.

My latest obsession is my Ninja multi cooker with air fryer lid. Now I did get this item free so I should mention that, but I love it. I replaced several kitchen appliances with this one. I think it would be a good present for someone who really loves cooking

I've never had any problem with the stainless and cleaning it. I use soft scrub bleach inside and out and do a once over with vinegar, my pans still look brand new and they are over 20 years old.

I have a piece of the Tri clad stainless Emeril, although at the moment I forget exactly which one it is, but it is excellent. I think they sent it to me free too. If I hadn't liked it, I would have donated it, but it made the cut as a keeper.

My personal style is a precise match for yours, but my wife is big on aesthetics. She hates mismatched items, so I MUST go with a set, particularly since the kitchen is her domain.

Good point on the handles. Last I was in a Sur La Table and a Williams Sonoma, I noted some fry pan handles of their fine cookware just felt uncomfortable, while others felt perfect.

I’m going to have to visit again to get a feel for the different pieces.

You sound very accomplished in cooking. I’d love to have dinner at your place!

Never use non stick! Use only iron or glass. I have stainless steel for back up. Vision wear by corning or heavy cast iron.

Years ago I gave up and quit with the cookware circus and went all in...

...24 piece Calphalon Pro Grade non-non-stick (raw)...every piece made.

I've heard many talk about "sticking" with these and many others...and it takes time and practice, and was taught and learned quickly, that it's about temperature. Work with it and foods "release" after the sear. Again, it takes time to learn and master. Also...only gas range...only.

I swear by the product and couldn't be happier.

I’ve not heard of Fissler, but the fact it’s German-made has my attention. Germans make excellent quality everything. I love German engineering.

It's true that a lot of the non-stick can be really toxic at high temperatures. But there is safe nonstick now. As I said earlier my favorite brand of nonstick is Ecolution.
I just don't expect it to last forever. I've been getting about 6 years good solid use out of mine, often use for lunches and breakfast eggs, usually when I want to cook something simple and want cook, eat, and then to be cleaned up and done in an hour's time.

Oh I also have a tiny little one egg pan by Faberware. Perfect for quick Egg McMuffin at home.
