They aren't saying you have to eat them.

How about vegans and vegetarians? Many students have allergies too.

I 100% understand your point on the financial burden, and think it is something that should be figured out.
I have four kids in school, and one who will be in a few years, so the financial burden put on us in the name of diversity is a topic I care a great deal about.
That said, I just don't see how it's a violation of church and state separation.
