While dinner is being made I have a uniQue story from today. I was supposed to go to the beach with my ex, her hubby and 9ish month old baby Lily. Well, Lily got sunstroke yesterday so it did not happen. Maybe we can get her footprint on the Mandala before Tuesday...hopefully.

So I was sitting at the beach and this young woman comes down. Spitting image of my ex, and we got to talking...(different eye colour though exact same build). She had just lost her child (4 months or so in the womb) and was distraught. So we talked about my ex's baby and my grown children and she kept looking at me (I do kind of look like a Mountain man right now...whatever) and smiling.


SHe offered me a sip of her vodka and when I said yes we talked a bit more and I said 'are you still troubled by your loss? And she was, and had almost died from opiates a few years back and got brought back to life. She died for about 4 minutes.

What brought you back? Was the natural question since I am not a shy person and can be overly abrupt according to some. And she says "it was..." and I said Jesus? And she looked at me and if I wer 20 years younger I would not be here right now...but I'm not 20 years younger....and she said "do you want to high five for Jesus?" and I said, sure of course.

And then we had a MECLA...for those who have never been on Dead tour that means a Momentary Eye Contact Love Affair. So she left me with her belongings and went down to the beach proper since I prefer shade. And she came back, and simply stated 'it was very nice to meet you'. She warmed a much older mans heart and I just got the wry grin look and 'and you as well'.

Brilliant day...a bit of a diversion from food...but it's hot and spicy pork sausages with garden vegetables stirred in with a bit of left over pasta and a fresh salad on the side.

Moral of the story. Look for small miracles and an exuberance of joy in each and every single waking moment. And never (for men) become afraid of appreciating a young and beautiful woman, and for women, never become afraid of doing the same in reverse. I'm still sporting my wry grin.

Beauty is a reflection of God. And simply appreciating it in another, without lust or greed, is a very pleasant moment to experience.

You all have a great week. This is prolly the only thread I will write on until the 29th...I read lots but I need a break....the entire Pho recipe is about to come into view...he's hemming and hawing and I said...it's a bunch of foodies on a Conspiracy website...and he said okay...soon...

Now why is the link above important...because if you are cooking anything grain based, where you want the flavour to come through fully...using ghee is the way to do it. I wrote this out in another thread so won't do it now but...er wait a minute...I wrote it, I can go grab it!

Now pork lard and beef tallow any tallow really contains very little water which is why it lasts a very long time on the shelf. The quality of the meats is important, because today (in Canada at least) the various producers are allowed to 'add' a certain percentage of water to, let's say bacon. The bacon that has had water added to it makes a far inferior lard.

So think of India and Ghee. Once they clarify (ie remove the water) the butter it lasts a heck of a lot longer because it is the water molecules inside the butter that harbour the bacteria. Ghee looks like a golden soup. It, unlike lard, does not go solid at room temperature (at least not here but where some of you are living it will).

SO the Indians being too poor to afford to eat meat (it's is bullshit they are 'vegetarians', they are by poverty level not by choice), and not liking the idea of killing a cow, they milk them to make Ghee.

It is the ghee that will saturate your dish with whatever flavour/savour you wish to add. Plus it gives you a healthy fat. Don't try this with the semi-plastic margarine. Useless poison. So knowing this, there is no end to what you can flavour your rice and beans with. Just for it's blase taste and health benefits you can always start off with a base of turmeric. It will colour it nicely just don't spill the powder on any sort of kitchen surface that is permeable.

From there, personally, I would modify the rice-a-roni recipe sans the noodles. SInce you have rice and beans...I've always loved that dish myself...

Now why is the link above important...because if you are cooking anything grain based, where you want the flavour to come through fully...using ghee is the way to do it. I wrote this out in another thread so won't do it now but...er wait a minute...I wrote it, I can go grab it!

Ghee looks like a golden soup. It, unlike lard, does not go solid at room temperature (at least not here but where some of you are living it will).

SO the Indians being too poor to afford to eat meat (it's is bullshit they are 'vegetarians', they are by poverty level not by choice), and not liking the idea of killing a cow, they milk them to make Ghee.

It is the ghee that will saturate your dish with whatever flavour/savour you wish to add. Plus it gives you a healthy fat. Don't try this with the semi-plastic margarine. Useless poison. So knowing this, there is no end to what you can flavour your rice and beans with. Just for it's blase taste and health benefits you can always start off with a base of turmeric. It will colour it nicely just don't spill the powder on any sort of kitchen surface that is permeable.

From there, personally, I would modify the rice-a-roni recipe sans the noodles. SInce you have rice and beans...I've always loved that dish myself...
