I made a meatloaf for Sunday dinner since my son & his girlfriend had some hamburger meat stashed in the freezer. I made the au gratin potatoes, too which were amazing. I haven't cooked anything different in a while & I forgot to take pics! Well here are the recipes anyhow.
BTW, since eggs are a premium now (at least here) I am substituting chia seeds for eggs now in all baked goods. For anyone who doesn't know about this, put 1 Tbsp of chia seeds in 3 Tbsp of water (per egg) for about 15 minutes until it gets like jelly. I usually stir good once. We used it last night in the Bisquick mix for waffles. It was fine.
2 lbs ground beef
1 cup bread crumbs (I use the Italian ones)
1/2 cup milk, wine, or red wine vinegar
1 tsp onion powder
2 eggs lightly beaten
2 Tbsp Worcestershire sauce
1 1/2 tsp yellow mustard
1/2 tsp black pepper
1 1/2 tsp salt (optional)
Mix and pat into a loaf Bake at 350 degrees for 45-60 minutes. I like mine to get a crunchy coating.
Here's the recipe I used for the potatoes. I made extra cheese sauce and layered potato, cheese, potato, cheese. I made a double batch in an 11x9 glass dish and used 3 x the cheese sauce. I cooked it longer because my potato slices didn't get soft, but it turned out excellent as the cheese around the edges got dark and were tasty!
