I believe that you know the answer which is pretty simple, the Bible - especially the OT, is taken from earlier works which even predate the people of Sumer. That said, the Annunaki are found in the OT or Massoretic Texts because the central figure in the story of the Abrahamic religions is, of course, Abraham, and Abraham was Sumerian and hence the 'God of Abraham' would have been a god he grew up with and the Sumerian gods were called the Annunaki! They were not Etherial Beings but rather Flesh and Blood beings like us, just more advanced with their technology, and that made them appear as gods to Humankind back then! This may no longer be the case as Humankind has had help in major tech advances in a relatively short period of time.
