Loving your "vous faites du beurre"!! And of course the great lesson you accidentally learned, which has become very useful for today!

Wouldn't it be lovely to have fresh butter, canned yourself, when worst comes to worst and there it is as a lovely treat, as well as giving your body the blessing of great fats? This is marvelous!

Great fats is right! That 'low fat' propaganda was a truly evil conspiracy. The trail riders of the pioneer days always carried fat and sugar with them, mixed up into lumps. It might be any kind of fat they could get but they knew better than to travel in a hard winter without it. The sugar acted as much as preservative for the fat as a source of quick energy and the fat kept them from exhaustion and freezing to death.

And then there's clarified butter, that keeps well in hotter weather; just needs to be kept out of the light, of course, like anything else we can and put up. Even lactose-intolerant people can eat butter in this form with no trouble at all:


True ghee is actually a longer process to make than mere clarified butter since traditionally it starts with the raw milk, which is nearly impossible for most of us in the States to easily (or legally) obtain to which a culture is added. Here's a vid showing those differences, and as the guy in the vid says, don't forget to 'glorify the cows' :)
