Anonymous Coward User ID: 70434452 United States 03/11/2019 10:18 PM Report Abusive Post Report Copyright Violation | I'm pretty sure Mom added an egg or two to the half ground beef, half ground mild sausage meat mixture she used for meatloaf, as well as a few ounces of evaporated milk (not condensed milk, big difference). Crushed cornflakes instead of bread crumbs or cracker crumbs, finely diced onion and whatever spices in her pantry that struck her fancy...I don't think she ever made it exactly the same way but her meatloaf was always awesome. I grew up in the 1950s, an era of inexpensive ground beef...3 lbs for a dollar except when it was on sale for 4 lbs for a dollar. I've eaten ground beef every way it can possibly be prepared. Check Google for a dish called Indian Corn Stew...really good...just another use for ground beef. ((Grin!)) |

A good lb lean ground beef(very lean) 3 or 4 slices of bread (crumbed) 2 TBSP melted butter stir into bread crumbs melted butter and seasonings(salt, cracked pepper) Suggestions: Garlic salt, chili powder, nutmeg 2 eggs stirred with 1/4 c milk 2 TBSP Honey(secret ingredient) squirt of catsup. ... mix up good. Bake at 300 degrees for an hour. Increase heat to 350 and cover the top of the meatloaf with those caramelized onions. Finish baking another 20 minutes or so. Less if you want onions golden. I am ok with them blackened. Either way is good! This slices up nice for sandwiches thanks to the honey! sometimes I add capers or chopped green olives. this is a good basic to start with and make your own style and preferences from here! User ID: 73087664 United States 03/12/2019 06:10 AM Report Abusive Post Report Copyright Violation | 3 slices whole wheat bread, cubed medium onion chopped small 1 8oz can tomato sauce 2 eggs, beaten before adding to meat mixture 1/2-1 whole red or green pepper diced fine tsp salt 1/2 tsp pepper 2 grated carrots or 1 carrot, 1 zucchini to sneak veggies in can add 1/4 cup milk..more tender, but I usually don't mix everything together without the meat, when well combined add meat and combine. The more you work ground beef the tougher it gets, so mix everything first and then quickly combine meat till everything is well distributed. Put in a large loaf pan. Preheat oven to 350. Mix 1 can tomato paste with a couple squirts of mustard, couple tablespoons each cider vinegar and brown sugar and mix well. Put it on top of the meatloaf and bake for about an hour and a half. Remove, LET SIT 10-15 minutes to firm up before cutting. Can put foil over the top to keep it hotter. Sandwiches the next day are soooo good God Bless You! Hamburg 1/2 bell pepper diced small 1/2 - 3/4 onion diced small 2 eggs Italian breadcrumbs Salt Pepper Dried basil Garlic powder Mash together. If too wet add more breadcrumbs. Texture should be like a meatball. Transfer to loaf pan. Heat at 350 degrees for about an hour and a half. Last 15 minutes remove from oven, transfer meatloaf with two spatulas to platter and top (only) with ketchup. Put back in oven. I usually make baked potatoes when I make this meal. Same cooking time. |
