OP the only way you'll know for sure if moving to Texas is a good fit for you is to just give it a try. I've moved around more times than I can count, and you're going to have both positive and negative comments about living in an area regardless of where you're moving to. You're the only one that will be able to decide if it's for you by experiencing it for yourself.
As far as Brits moving to the US I currently live in the Atlanta, GA area and have met quite a few Brits that have moved here, and so far all of them love living here. The only thing you might miss are some of the local foods, etc that you're used to, but there are quite a few British stores around here that import and sell a lot of that stuff for their British customers.
I say give it a shot and see what happens. You can always move back to the UK if it doesn't work out right?
