On stuff like that I cook oat groats.... and I like sprouted oat groats in smoothies. And warmed as cereal too. a forgotten grain is Barley... as to BARLEY FLOUR that is.. Makes the best banana bread. I discovered that many years ago when I was temporarily wheat free. Oat flour would tend to cover up the banana... barley flour lets the banana sing. I had runout of barley flour quite some time ago and have a order coming from Swansons... their red mill prices are better than the super market . We have a natural foods store here which sells locally ground organic spelt flour at a fair price.. so I get that here. Spelt bakes pretty much like wheat.. but whole grain spelt is far milder and sweeter tasting than whole ground wheat flours... exceptional in chocolate chip cookies. I bake with several different flours as you can see. Always because of roundup I pay the extra for organic. spelt by the way was the "manna" in the Old Testament story about the fleeing egyptians with Moses.. it cannot be genetically modified.. and it adapts itself to various planets it is grown on. Widely used on Pleiadian planets. Spelt gluten is different than wheat glutens and will rarely bother a person with gluten problems.. I cannot use the GMO wheats anymore .. they get my guts bad.... spelt does not bother my body. In fact gmo wheat is the only grain that does and that includes ORGANIC wheats. because some are GMO.. ditto DMO corns too come to think of it... but I am good with the high quality corns that are not GMO and organic... Its ugly to look at .. but corn bread made with high quality BLUE cornmeal is delightful. And of course instead of wheat.. I use spelt in it... There is a mexican store here that used to make tortillas once a week with a blend of red and blue corns... making a beautiful violet color.. and a wonderful taste. It was a special order on those days and they made extra to sell to the public too.. They don't anymore and I missed those fine violet tortillas made from wonderful Mexican grown corns. |

I enjoy some dairy but have to watch how much I consume because the phosphates in dairy produce some nasty charley horses in my legs...I read all labels.. can't handle added phosphates in stuff. Oats raised clean and organic of course.. are a super grain to me. Higher in protein.. nice fibers in them etc. sweet taste. I may try a cookie recipe that would resemble ... xxxxxxxx..... (name won't come.. sorry) that uses 1/2 oat flour and 1/2 almond flour.. butter and brown sugar or maple syrup... I might grind some raisins or dates instead of sugar.. would like that flavor I think. hmm.. maybe ground dried cherries or blue barries might be nice.. or cranberries... |

I mean no eats salty oatmeal right??? oatmeal bread is great, some restaurants serve it. but it has GLUTEN avoid it Most people with gluten issues can handle the TINY BIT OF GLUTEN in oats. and now there are some gluten free ones... Wheat gluten now bothers me.. but because its GMO. gluten itself does not.. spelt gluten goes well with my guts.. but I don't have a genetic error around gluten that some people do have. If one sprouts grains that have gluten.. the sprouting process changes the gluten to other proteins/amino acids.. but few people know much about sprouting. there is one brand of totally sprouted bread out there and not a drop of gluten left in it... I am out and can't remember the brand this morning.. has the word "life" in the brand name. I like to use it as a pizza base... can't use wheat pizza crusts anymore. I can use spelt ones though. |
