My onion strategy for non-onion eaters. Chop them fine and cook them down to little brown dehydrated nothings. Don't burn them, but do cook them shriveled, a little beyond just browned. Then proceed with the base build, adding garlic, serranos, whatever else you intend to add in order to create the sauce. This method makes them all but disappear in the final outcome but serves to flavor and thicken the sauce. In the final product, non-onion eaters don't even know they are included.

Or, go with toasted granulated onion spice.

I would go for a stir fry. Thinly slice some steak strips and cook them in coconut oil with salt+pepper+chili powder+cumin.

Slice up some onions, red peppers & throw in some broccoli. Lightly saute the vegetables in butter+lemon+tarragon.

I would be dead right now if I didnt find out myself that I was highly allergic to it. Not a fad, they messed with wheat and now it is toxic to many people. I consider myself lucky to have Symptoms ( Asthma that is cured by avoiding gluten). Many people have sub-clinical allergies that are slowly destroying their body. As far as cooking, DONT, take her to a restaurant that has some gluten free choices and tell her that you regularly eat there. You dont want a female to know that you cook because that makes you look more like a beta cuck. You only tell them about your cooking late in the game, after you have bagged her a couple hundred times and dont give a fxck if she walks.

FYI, just a side note if you do the stir fry...

Soy sauce has gluten ....as well as many of the condiments and sauces you would probably use to make food taste good.

Keep it simple since you have no education here. Use butter garlic and spices for flavour, sauté the veggies in it then mix it in with the rice.

If you like curry...it can be gluten free if homemade properly.

If she likes turkey dinner, you can use gluten free croutons to make stuffing.

Have fun and try not to kill her.

Many dietary restrictions are a mask for mental illness. As are most vague health problems where no blood test reveals anything. Celiac and many 'allergies' are often self-diagnosed.
