Never heard it called melon before, and checked picture to see if it's what I thought it was... it was... lol

Iv'e never had it any other way besides pickled in a Indian type pickle.

They don't draw out the bitterness... they enhance it when it's pickled that way.

It's like a condiment so you don't eat big portions of it at a sitting... but put a spoonful next to your rice, or whatever... and blend, dip... as you go... So, good... YUMMY!

thanks! I'll look up some Indian pickling recipes. It occurred to me it would taste best pickled somehow. I've got some soaking in olive juice now. I bet a spicy pickled flavor will be delicious!
